    Tomato soup cake

    7oz brown sugar

    2oz walnuts

    Set oven at 350f,180c or gas4. Grease and line an 8” round cake tin or 2lb loaf tin.
    Cream sugar and marg, sift in spices, fold in flour and soup, add bicarb and mix well. Mix in fruit and nuts then bake for 1-1/4 – 1-1/2 hours.

    I used some cut up dates left over from Christmas to make up to the 6oz of fruit and mixed it with a little flour to stop it all sinking to the bottom. (and broke the walnuts up a bit)
    It is a bit 'orangey' though. I was wondering if you could add something to darken it that wouldn't taste... Gravy browning? I don't know if that has a taste as well as a colour? Any ideas? Sorry to hijack your thread OP:o
