Just had a very enjoyable weekend doing nothing in particular (except the usual dailies and the odd bit of Mum's taxi).
I bought some primroses yesterday, and put them in the tub by the front door this afternoon, to replace some cyclamen that died.
I've also drawn up a plan for the allotment, written a list of everything I fancy growing (then crossed off every other item!;) ), checked my seed box and ticked off all the seeds I already have. I'm going to look through all the catalogues and sort out what I need to order from where. I had a £5 and two free packets offer from Thompson and Morgan, so will use that, although I don't usually order much from them as they are dear.
I also sorted out some magazines, and read them before reycling, just to check I didn't need to keep them!:D
After last week, I think I deserved a restful couple of days! I'll be working tomorrow morning, but will try and do the list in the afternoon.It is never too late to become what you were always intended to be0 -

Question! I have a smallish chicken carcass here with legs not touched, just the breast meat taken. Which is the best way to make a chicken soup with this please and how much water etc do I add? It was a 1.3kg chicken and I have carrots and onions here

I would - pull the meat off the legs first, i mean - then break up the carcass and chuck it into a big saucepan with lots of water and a carrot and an onion (leave the skins on, adds to flavour), a bayleaf if you got one, and some peppercorns. bring to the boil, scoop any scum that rises to the surface (scum translation: ick stuff) then turn down to a simmer and boil for a couple hours. Drain (into a bowl, not down the sink as i did once) then chuck the carcass/veg, and use the stock and meat to make a chicken soup. I would add a couple of pints of water, enough to cover the carcass at least, possibly more. Oh, and be careful about adding salt; simmering intensifies the flavour of the salt, so if your stock isn't intense enough, boil it on a fast boil to up the flavour and reduce it, THEN add salt. the flip side of this is that you may not end up with enough stock to make the soup.. so its a balancing act.
to make the chicken soup, i would saute some onions, some other veg (whatever you fancy), add the chopped up or shredded meat, then the stock and cook the veg - half an hour or so - add any flavourings you like, then use cornflour (couple tsp into a mug of cold water, stir vigorously, then add to the soup) to thicken. Or you can go the chinese chicken and sweetcorn route.

I would take the meat off the carcass. Put all the bones, and any bits on the bottom of the roasting tin in a large saucepan with a quartered onion, quartered carrot, stick of celery if you have any, and either some mixed herbs, or two bayleaves or bouquet garni. Cover with water, and bring to the boil, simmer for an hour or two. Strain off the stock, and discard all the bones etc.
Melt a knob of butter or some oil in a large saucepan. Add chopped vegetables ( I use a mixture of whatever I have, potatoes, carrots, leeks, celery, swede etc).Allow about 500g of vegetables for a litre of stock. Turn heat down, put on saucepan lid, and leave for 5 minutes for vegetables to sweat gently. Add stock, and simmer for an hour. You could add your chicken meat near the end.You can liquidise if you want.It is never too late to become what you were always intended to be0 -

PP - your daughter's dessert looks delicious! Well done Miss PP!
Not had a very OS day today. Got up reasonably early (for me, anyway) at 8:45, came downstairs with daughter and made her breakfast. I'm fortunate enough to have a toddler who loves her bed and rarely wakes before 8:30 / 9am.
Came downstairs to the delicious smell of freshly cooked bread as I'd put the mix into the BM the night before and set it on timer. Wanted to take a loaf over to my mum & dad's and wanted it still warm. If OH gets a sniff it'll be gone! He's devoured 2 loaves in as many days!
Just as breakfast was cleared away and I was washing up, OH appeared and made himself breakfast and us both a coffee. Fairly relaxed and lazy start to the day!
Shortly thereafter we went over to my mum's as OH is helping out my dad and Miss Mice and I went over for dinner. Everyone liked the bread and Miss Mice had a lot of exercise outside with the dog and walking to the fields to see Grandad and Daddy so by the time half 1 came about, she was very tired.
Fell asleep in the car on the way home despite my best efforts as she'd had just enough to take the edge off her tiredness and means that she is now playing upstairs in her cot when she should be sleeping.... :rolleyes:
Means she'll be a miz this evening, so an early night for her!
Another loaf is currently in the BM and I've sorted through 3 boxes of stuff from the garage to see whether to keep, Ebay or bin. I have so many lovely ornaments which have cost me a lot of money over the years, but with a little one about and limited shelves, they haven't been displayed for ages. They're all so nice and I'd rather not get rid of them, but I haven't even SEEN them for at least 2 years....they've been stuffed into a box and stored. So what's the point in keeping them? Plus any extra money will be useful, should they sell on Ebay.
Have a mini-job lined up starting next Wednesday. Not much, just delivering a few phonebooks in a nearby village, but they pay just over £60 with an allowance for petrol, so it's a bit extra. Hopefully will hear from the other job sometime this week.
Going to be a busy week coming up, regardless.
Monday : we have Meeting re setting up of local play group for the children around the area, then swimming with Granny
Tuesday : Sing & Sign
Wednesday : Minus 1 to 5, plus picking up the phonebooks to be delivered
Thursday : Try out a fairly local playgroup for my daughter as she's desperate to play with other children. There's one in the next village over which is £1 per session and hopefully should be good for my little girl.
Friday : DAY OFF! LOL.
Plus this week we should hear something from the Halifax regarding the outstanding charges that we're hoping to get back. Their 7 days are up on Thursday of next week and if I don't hear anything, it's MoneyClaim time. Kind of hoping it won't get that far to be honest, but we'll see.
Had a letter regarding the other Halifax account saying that statements for that should be with us within 10 days, so will start the ball rolling on that one as well. Significantly less charges on that account, but it's the principal.
It's becoming really foggy here at the moment! Can hardly see the bottom of the garden...better get on and get tea ready as OH should be back soon, I should imagine.0 -

Could I put the carcass in the SC
How long should I leave it etc?
So basically I:
(1)remove excess meat from chicken
(2)break bones and stick in pan or sc with a carrot and onion chopped with skins on
(3)Add enough water to cover chicken
(4)Simmer for a few hours and keep skimming scum, then discard bones and veg. Add a bayleaf or herbs if desired.
(5)Drain rest through a sive then I have the basic chicken stock
(6)Chop up veg I have (swede, carrots, onion and spuds) and cook for abit in water or sweat in some butter.
(7)Add veg to stock and simmer for a further hour or so, then add some left over chicken and can leave like that or blend. End S&P if required upon serving as it may not need seasoning
Is that all correct? If its ok to cook in SC, what are the time frames?
