    Hey up yo lot - Mr me out til really silly o clock at a local 'jam' and I got home very late!!!! Tired today

    Womble mothership is calling - its wind free here again today - really unusual!!!!

    blimey greying how the heck did you make butter? i'd have never thought of using cream for that.

  • LT m'dear - tis simple as a simple thing to make butter from double (or whipping) cream. It is ALOT easier if you have some sort of food mixer (eg Kenwood/kitchenaid) or food processor (eg kenwood/cuisineart/Magimix), but can be made with a stick blender or even by hand with a whisk.

    The instructions I followed are here, but to be honest, there are many references to making butter on MSE - esp the 'Old Style Threads' and we've just caught up with the episode of 'The Fabulous Baker Boys' from wednesday night and they showed how to make butter (they had a Kitchen Aid tho - red if anyones interested.... :D).

    Essentially, you are 'overworking' the cream. If you've ever set out to make whipped cream, but wandered from the processor at the wrong time, then you've made butter!!! (it REALLY does change that quickly). The important thing is the removal of the buttermilk from the resulting butter - if you leave it in, it can result in rancid butter - NOT a good thing - however cheap your cream in the beginning! I washed it out by hand, but the guides do seem to suggest you can do it in the machine. The water in the Fab Baker Boys was alot cloudier than mine was - I washed until it was clear, but then I wanted to keep my butter, not eat it straight away.

    What I like is the amount of money that was saved. Butter is so expensive at the minute, and yet if you can get 'whoopsied' cream, and have a little time, you can make it yourself. Perhaps I am too easily pleased, but I found it quite theraputic - and I was rushed for time doing it. The butter doesn't stick to your hands (unlike bread dough!) and it's just amazing the chemistry that happens in front of your eyes!
