And we're having HM nut loaf with roast root veg for dins - I made the nut loaf at the weekend and froze it in slices, and Mr LW has prepped the veggies and left them in water for me.:A
LW - would you share the nut loaf recipe? I want to make one for Xmas dinner, and can't find the recipe I used last year!

Lets see:
1 onion, chopped small.
1 or 2 cloves garlic, crushed
1 oz butter
1 dessertspoon plain flour
A good sploosh milk (I use semi-skimmed, cos that's what we have in the house);)
2 eggs (largest available to you - I use free range, from the Farmers Market)
7 oz brown or wholemeal breadcrumbs (5 slices wuzzed in the food processor seems to be about right)
13 oz nuts, also wuzzed in the FP. I use a mix of walnuts, cashews, Brazils and almonds, in roughly equal amounts, but use whatever's available to you;)
2 or 3 oz STRONG Cheddar cheese or similar
Small handful mixed herbs
Grease and line a 2 lb loaf tin.
Melt butter in a large saucepan, and gently fry the onion and garlic.
Remove from heat, add the flour, mix in, return to LOW heat, add milk and mix til you get a mixture roughly the consistency of cake mix.
Leave to cool.
Meanwhile, wuzz the bread and nuts, grate the cheese, and mix these all together, with the herbs, in a bowl.
Is the onion mix cool? OK, good, add the eggs to it and mix in.
Gradually mix in the dry ingredients from your bowl (this is why you use a LARGE saucepan) - if there are other members of the family present, have them stir in some magic also.;) (A tradition in our house).:o
Once it's all thoroughly mixed, turn it into the prepared loaf tin, pressing into the corners and smoothing the top.
At this point, if you're strapped for time/tired, you can bung it in the fridge overnight and cook it next day - I usually do this.;)
Heat oven to 180 C, put the loaf in and cook for 40-45 minutes.
Leave to cool in the tin; once cool, turn out onto a plate and slice.
I find this size loaf does 8 slices, which I freeze, with a bit of greaseproof paper in between to stop them sticking together.
Have fun!:DIf your dog thinks you're the best, don't seek a second opinion.;)0 -

Very windy here too but probably not half as bad as in Scotland :eek::eek:I must not fear. Fear is the mind-killer.
Fear is the little-death that brings total obliteration.
I will face my fear. I will permit it to pass over and through me. When it has gone past I will turn the inner eye to see its path.
When the fear has gone there will be nothing. Only I will remain.0 -
