hmmm so the pack says you need 4 eggs when in fact you need 5, as you need 1 egg white to make the icing.

Can you tell I ran out of eggs, I was just about to ice my cakes then realised no eggs.

Mine is in the oven baking. Very impressed with the quantity of ingredients and the smell. Had a fight with hubby and dd to scrape out the bowl! Yum

How long did all yor cakes full size and mini take to cook? Just checked my big one after three hours and the top is burnt (it was covered but think my oven temp is shot).

I baked mine in a 7" sqaure tin and it took nearly 5 hours!!! removed the paper from the top for the last 45 mins and stood the tin on some brown paper in the oven (apar helps to prevent bottom burning - or so mother said !!! ;))

My cake is officially destroyed!! Burnt all around the edges and inedible. (Am trying to trim but it's too crumbly!). So shall I try another one or be grateful for the foresight that led me to buy one half price in M & S?!

PS. Am I the only person who has managed to ruin one of these so far?

Thanks, that's pretty much what I thought but pa has been scared to death by the doctors and seems to think pretty much everything is bad for him.
Lisa my OH has been diabetic for over 25 years, 4 insulin injections a day and he eats Christmas cake. Diabetics thankfully no longer have to have a special diet (I can remember weighing everything out when hubby was first diagnosed). They just have to have a normal healthy diet, low fat, low sugar, the same as most of us should be eating. :o

I never buy special diabetic food or chocolate, diabetics can have normal chocolate but just a small amount. A couple of squares or a couple of chocolates out of a box will not harm him. It's the same with food, a small slice of cake or pudding as a treat every now and then is fine.

There's a recipe for Christmas Pudding on the Diabetes UK website, I'd recommend having a look at the recipes on there just to give you an idea:
    http://www.diabetes.org.uk/Guide-to-diabetes/Food_and_recipes/Recipes/Christmas_pudding/?nt=1

You can make sugar-free custard using Birds Original Custard Powder (the one in the tub), skimmed milk and sweetening it with granulated sweetener. ;) There's a thread on sugar-free baking over on the Old Style board:

Sorry for going off topic. :o
