Oh and bad luck on the burnt ones folks, guess the advantage of having a solid fuel (log buning) Rayburn to cook with is I very quickly learnt the art of cooking things till they are done, which varies greatly depending on the mod the oven is in!

i just made my cake and after three and half hours is totally burnt! fuming!!!

Awwwww, that's a shame. Did you remember to cover the top with a layer (or two) of greaseproof?

I actually found that Gas mk was too low and had to put the oven up to Gas mk2, and even then it took five hours. Did you put your's on the lowest shelf in the oven and cover it with a double layer of paper on top, and round the top edge?
    Val.
  • mine has just had the seal of approval from my dad who says it is just perfect with the icing and marzipan being a good balance against the cake (i was worried that there wasnt enough marzipan as it looked very thin when rolled out). ive bought one for my brothers 30th birthday cake but will keep an eye out tomorrow and if i see another i will make it up for next christmas feeding it with extra Brandy and then sealing in an airtight container. apparently fruitcake can keep for years if treated this way so for £2 its definitely worth the gamble!
    Car Boot Queen!!

Clothes Golden Rule: Never pay full price unless it is an utter bargain in the first place!
Sales, boots, charity shops, ebay- why would anyone ever pay full price for anything??!

Loads left in Irvine today ... I bought 2 but there were stacks of them. They're on an end aisle at the top of the store, not far from the bottled water / bread section.

    Did you see any cupcakes?
  • I called in my local tesco this evening. 5 cupcakes and 3 cake mixes left, so I thought i may as well get them all. They really are good value. I had bought 1 cupcake mix when they were £2.50 and only baked them this morning and went down so well with the family. Hope the cake is as popular.

Bought cupcakes this morning. I have been reading about some mishaps with cooking the cake - anyone with tips re baking the cupcakes? I haven't opened the pack yet - would I be able to omit the brandy or is it already mixed? My cakes usually are a disaster - I am told it is because of the fan oven and that I need to adjust the temp. Any suggestions before I make them after Christmas? Thanks in advance.

The brandy is separate in the cupcake mix. Its to mix with the icing sugar to make the topping.
