  • There were loads of bags of xmas cake mix left at Martlesham extra yesterday, on 2 big trolleys just as you go in the doors. I only bought 3 (£2 each), think I may get a few more later.

  • We made the cupcakes this morning. did the icing with sugar and not brandy, have just tried them - they are lovely. they remind me of carrot cake with dried fruit instead of carrot. Sadly my Tesco has none left.
  • Made the christmas cake last week & it looks great! Managed to pick up some cup cake mix yesterday but have no oranges in the house, can I use satsumas instead????

You'll be fine with the juice but may have trouble grating the rind.
Lemon rind would be ok, or just use what you can get off the satsumas - probably use 2 or 3.

My cupcakes have just come out of the oven, I got 2 packs at New Milton earlier, plus one of cake mix. They have loads of cake mix, but not many cupcakes, unless they have more waiting to be put out.
I've made 12 big ones plus 4 mini-sized; I think with the other pack I will make all mini-muffin size, will probably get about 36:)
