Agree with LondonDreamer, fruit cakes like this don't rise much - if at all.
I got two more yesterday for Christmas presents which l'm going to make up for them, there were a couple of hundred left in Gaywood, Kings Lynncontemplating getting some more, definitely will if they go down in price.

Can anyone tell me how deep a 20cm tin needs to be for one of these, i only one 1 deepish tin but not sure if its deep enough ?:wave:0

I made the cupcakes yesterday with my 8 year old, so easy to do and delicious. There is enough mix for probably 18 cakes. We just used the 12 cup cases provided and the mix was overflowing and there was quite a lot of mix left to lick from the bowl, which my son loved. The cakes we made are larger than they need to be so I'll definitely be making more smaller ones when I use my next packet. (I also only used half the brandy in the icing so it wasn't too strong for the kids.)0

Made the first of these last weekend, smells scrummy. I'm topping it up with additional brandy. Second one in the oven now to give away as an Xmas pressie. I've bought 2 of the cupcake mixes, and planning to do one this week - kids want to make and decorate for their teachers as end of term pressies (I'm sure it will make a change from the usual smellies, choccies or candles they get loads of).:cool: cazwasere :hello:

This was the 1st christmas cake that I have ever made, finished icing it yesterday and started eating it today - just couldn't wait until christmas to try it !! Its really yummy - might have to buy another one now0
