    Chicken is lean if you take the skin off - I like to make a nice spring broth with it - dead easy:

    Put whole chicken,or portions, skin on, in pot with 1 each of sliced onion, carrot and leek top. Add celery stalk if you have got one. bung in some whole black peppercorns, about 6, and a bay leaf. Bring to simmer and cook until done, about 40 mins should do it. Leave in pot to cool, take out chook, take off bone and remove skin. Strain stock and chuck veg. Put in fridge so that the fat set and remove it. You can keep chook and stock in the fridge until you actually want the broth, from here it's a bit of chopping and 20-30 mins on the hob.

    When you want to eat - Chop whatever veg you like, I use carrot, onion, leek celery, spring greens, potato, peas, french beans, broad beans, pearly barley (pre-cooked). Bring the stock to simmer, taste and add a stock cube if it needs it (I usually add some veg stock powder). Throw in chopped veg, hard ones first. Add shredded chicken and simmer till the veg are cooked. Season as necessary. As this is not cooked for very long the veg stay nice and green and fresh. I add fresh chopped parsley if I have it too. Very low fat and really nourishing but light enough to have on a nice spring day.

    You could do exactly the same with rabbit or turkey leg.

    Stayed in all day waiting for dd's new suitcase to be delivered.

    She sets off tomorrow so don't dare miss the delivery!:eek:

    Made DH salmon and huge salad (his bp is now perfect and he is taking all the credit- the fact that I have been researching the best foods etc and shovelling him full of fruit, veg and fish for weeks was not considered ;))

    DD had sweet potato soup with cheese and crackers and will make chicken korma tonight with apple pie from yesterday and some ice cream.

    Going to nip down to supermarket for any YS bargains that I can freeze or use up quickly now that it is safe to leave the house.

    Turkey mince is very low in fat so that should help. So is Quorn but not sure how you feel about that. I like the stuff but usually add tomatoes, mushrooms, garlic and spices to give it more flavour which might be a bit dodgy for your digestion just now.

    Lovely to see Hester back and hoping ginnyknit's husband gets reassuring news from the hospital if you know what I mean.

    Mardy:- What about roasting the veg, carrots, turnip, parsnips, any onions, peppers, leeks and of course potatoes. I follow Delia...peel and cut veg pop in plastic bag pour on a couple of tbsp's of oil. Add rosemary or any favourite herb (optional). Turn bag over several times to coat veg. Leave in bag for anything up to 24 hours. I usually do 2-3. Chuck into hot roasting tray 250 degrees (hottest) for at least 40 minutes. Just lush. would go great with turkey mince patties! :D

    Good Lord! I can just about imagine Mardatha slipping one vegetable into a meal but a selection, I think not. Unless, of course it's kale and then there will be LOADS AND LOADS of it

    It just doesn't get much worse than having to eat veg. Quite like the idea of roasting them actually. Sort of torture, with a point. ;)
    Think I'll give the Quorn a miss ta ..

    Sunny here up till now so we took advantage to get into the garden for a bit. I have now discovered another bit of the iron bedstead that I have been digging up since we got the garden. I think it's either the bed head or the foot, but it's buried and riddled with roots and in an awkward position. Any sensible person would just cover it up again but I know it would mither at me and I wont be happy until it's up. Does not help that I don't know how big it is or what shape it is, so having to excavate along the rusty ironwork to winkle it out. I sometimes wish I did not have OCD tendendences :o

    We have a juv robin in the garden, so all the mealworms obviously worked. Adult was hopping about our table as we had our tea, looking for the mealworms dropped when the feeder was filled. No fear at all! I read that they evolved to follow wild pigs as they rooted in the earth, which is why they dog us when we are working
    in the garden - I thought it was because they loved us! :rotfl:

    Yes I love to see the little fledglings coming into the garden to eat, juv robins look like miniture thrushes to me :D........Ive got a garden full of, greenfinches, chaffinches, sparrow,.and goldfinches, they really are battering my food bins, but I love to see them all come on to the feeders....................The bird food costs a fortune though...........

    Mardy how can you eat meat if youve not got veg to go with it.?..Its like having bread with out butter.........I love my veg, especially swede, I love it ,id eat it with every meal............But I do find swede very hard to cut, it runs around the kitchen when I try to cut it...:eek::eek:
    I hope your all getting through these tough times okay, I had to buy a loo seat today, god what a price:eek:for a plain white one, I hope it keeps on okay Ive tightened it to the max of what my hands would allow..............................No rain today in fact its been sunny at times and ive got up to date with the washing without using the dryer..........Have a good evening all.......

    Oh Mar you are a lost cause :rotfl: Even card-carrying veg hater OH has got used to eating them now (has taken 27 years though!), and quite enjoys the wide selection of green stuff I ram down his throat :D
