Had a quick skim through this thread. Is the general concensus that I don't need to blanche or stew apples before freezing them? I stewed 2 pans full this morning and that was only about 1/3 of a carrier bag. This could prove a little bit time consuming.I have plenty of willpower - it's won't power I need.

HelzBelz how about apple ginger jam or herb jellys? The jelly recipes use up a heck of a lot of apples and work really well with chilli, rosemary, thyme or mint.0

already done chilli jelly (6 jars) and mint jelly (10 jars) and dried apple rings and fruit leather, and it's barely making a dent in my supply.
The problem I have is I need something that uses LOTS of apples0 -

Im after some advice about apple sauce, (or other things to do with apples)
My neighbour has an apple tree, he usually just lets the apples fall and spoil, and then strips the apples left on the tree and puts them in his bin!!!
This year, feeling more eco and waste aware i asked him if I could pick some apples and give them to friends,
so far I have:
...made so many apple pies they are coming out of my ears
....picked and bagged some up for a harvest swap at a local allotment
....advertised them on freecycle and had lots of freecycler picking for themselves
The season is nearly over now and there are still lots of apples on the top bows, they are now turning a lovely red.
I dont know what variety they are, to me they are quite tart to eat raw, and when cooked they go mushy quite quickly.
I have made some apple sauce, but dont know if im doing it safely. Im boiling the apples with a little water, and then filling small jam jars. The sauce seems sweet enough when cooked, but im wondering if I should add sugar to help preserve it?
Im just worried about giving it away if its gone bad or fermented or something horrible like that. (I have used small jars so they will be used up quickly, and also kept jars in the fridge as soon as the sauce has cooled)
Any other ideas for what to do with them would be great, especially ideas that dont need lots of additional ingredients or special eqipment.

I'm afraid that it will go off Lindos. To preserve food without freezing you need either a lot of sugar, salt, vinegar or alcohol -or all of the above. Even with sugar I don't think your apple sauce will keep very long unless you freeze it. I freeze mine in small tubs for months or I keep it in the fridge for about a week.0

thankyou pinkwinged for moving my thread, i'll have a look through this thread for ideas, also thank you thrifty, you have confirmed my initial worry, guess i'll try freezing some sauce, and try and think of something else for the rest of the apples!!!!!0
