Floyd, you can make jelly with any apple but would use less sugar if using eating apples and it won't need as much to set...if you are adding vinegar to the herb jelly you might be able to adjust that too...never used eating apples for jelly so not sure;
Woodyrocks...I dried (cooking) apples in my electric oven last year. Core, peel and slice fairly thinly, lay out on baking parchment or greaseproof paper, you should be able to get four trays at least as not much height needed. Dry at 100c for about 6-8 hours...every oven will differ. I stored mine in brown paper bags and they lasted until a few weeks ago...cool completely before storing.

I had a go and it set nicely, a little on the sweet side but we are already working our way through the second jar as its lovely with cheese and roast meats. I didn't use vinegar, I added lemon juice instead but still got quite a soft set from it as I was a bit cautious about overdoing it and ruining the lot0 -
I have a small orchard of a dozen apple trees and a couple of pear trees. Apples are mostly cookers with a few eaters. I've got a bit of a glut this year (again) and am running out of things to do with them.
Point to bear in mind - I have a tiny freezer cabinet and can't fit big bags of sliced apples in!
Here's what I've done so far:
Preserves
* 1 dozen jars of apple butter (half of these are left from last year!)
* 1 dozen jars of apple chutney (again, half from last year)
Cooking from Fresh
* Crumbles (apple, or apple + addition of soft fruit)
* Apple pies
* Fidget Pie (ham, apple and cider)
* Pork with spiced apple
* Apple muffins
...I'm now running out of ideas. I've tried some away but haven't had any takers!

What about making apple juice or cider? Apples are lovely sliced and roasted in the oven with pork.
There's an earlier thread with lots more suggestions so I've added your post to it to keep the ideas together.

If you've got some demi johns, apples do make quite good dry white wine. However, you need to read up on it first. It's quite a time consuming process, with lots of filtering off from the yeast and rebottling in the demi johns several times. Also you need to leave it at least 12 months before drinking.0

I have just made a huge pan of braised red cabbage (Delias recipe) with the last of my eating apples even though she says to use cookers. I have made it before with eating apples and it is delicious and keeps for a few days in the fridge. We have it with steak pie, sausage and mash, cottage pie, roast chicken yummmmm
I also made some beautiful herb jellies, try chilli, thyme or mint jelly as you can use apples for the base of all of them.

Yes, the braised red cabbage and apple recipe is delicious. We usually use a mixture of eating and cooking apples. The Bramleys tend to dissolve into the mixture whereas the eating apples stay whole so you get a nice balance of flavour and texture. We often chop up a Mattesons smoked sausage and stir it in and have it with wholegrain mustard mashed potatoes.0

Please Help, I'm desperate for ideas of what to do with the apples from the tree in my garden
I've already set up a fermentation barrel and I'm trying a cider recipe my MIL has found; The box of windfall/damaged apples is going to a friend of a friend with a cider press in exchange for cider; Bag fulls have already gone to any neighbours, family and friends who didn't say "no" quick enough; the freezer is almost full of apple pies, crumbles and purees etc and I've still got 2 stacker boxes full and I've run out of ideas! all the recipes I can find only use a few apples and I'm not even making a dent in my supply.
So any ideas for what to do with lots of apples would be greatly appreciated0 -
