The exchange rate makes a huge difference, doesn't it - having to send over a couple of grand for the mortgage, it gives me an extra month's mortgage payment, nearly 700 euros!
Sorting a filing cabinet drawer and reseeding the salad bed sound equally helpful

Delurking to say, this really resonates with me - we are definitely time poor and do compensate with eating out, getting takeaways or eating convenience food rather than what we had planned as we are too tired or don't have enough time.
I need to get better at planning and having contingency - as long as I have a meal prepped for the slow cooker and put it in the fridge the night before I am fine but when I get home at 6.00 after being out the house for 12 hours, I struggle to cook from scratch. Not so bad in the winter but there are limited slow cooker meals in the summer I find!0 -

Hi Katep23, I'm sure there many people in the same boat. Menu planning has really saved is a fortune and by cooking and freezing, then reheating we have ready made HM meals.
Pulled pork or brisket is great in the summer in the SC - massive salad by the side and you're made :T

Am on leave this week so have a bit more time to prepare dinner.
I have a hand of pork marinated in Jim Beam in the slow cooker at the moment, bought from local butcher. Hoping it is nice so we can have this as a summer slow cooked meal.
We love brisket but have it as a Sunday lunch, never thought of slow cooking it during the week to have with salad, so thank you
Dinner tonight is creamy cod for me and pan fried chicken for OH with sauteed potatoes and asparagus - I love having a bit more time to cook
I really enjoy reading your diary, it's always so positive and helps me to focus on chipping away at our mortgage which is in the £300K range.

Morning, yep, my mojo is back although it had a little wobble last night, but back this morning. I'm undergoing some difficult discussions at the moment and I'm finding them frustrating.
Anyway, it's Friday :j and DS heads off for the weekend. Mr T has been paid, money shuffles all complete and £15 claimed from PC :T
I need to claims vouchers from CP to pay for dinner the day we go on holiday

Morning Katep23, your dinner last night sounded good - I hope the menu planning goes well. I'd recommend a food inventory covering freezer, larder stuff and fridge. It's often a surprise how much food there is and you can menu plan to use it up and bank some cash on the way! £.
