Westie..lovely to read this post..especially as I travel back on yet another FGW commuter train from the big smoke. It certainly makes me think about where I want to be in 5 or even 10 years time and it's certainly not on this! :rotfl:
It just shows where you can get when you are focussed and determined. Your mixture of sun and sailing instruction sounds a great combination

Tilly...do get Mr T to talk to new employer re expenses...that's not great. Ours pay within 10 days of receipt which if you are fairly prompt works out well, no reason why everyone can't do the same.

I completely agree about luck. I have people saying that to me about our house abroad as we have loads of land and its peaceful, yet close to amenities. Maybe lucky to find it, but how we bought it is visible in my signature - hard blinking graft.

My head may well explode with all the things happening at the moment.
Dinner this evening was scrumdiddleyum - Save with J, all in one chicken dish. I added more chicken thighs and legs, potato wedges and an aubegine. The balsamic and oil (2 tbs:eek: but it has fed all of us tonight and enough for all our lunches tomorrow) made a really flavoursome sauce with the tomatoes and peppers. I can't find the recipe on line and I'm not near the cookbook to grab the recipe name either - will definitely have as a 'what's easy and quick to throw together' dish. Took 5 mins to throw together and an hour in the top oven
Brizzle, Mr T has spoken to someone about expenses - no news yet on when they get paid but he's calling me soon and we can catch up.
I wonder how many snails I will find in the morning :eek:

Tills - it sounds like THIS 'Save with Jamie' recipe - going by chicken thighs and the quantity of oil/balsamic.

Morning, I see Spring has disappeared, although the weather may seem autumnal the bird song is a delight. Thunder, lightening and rain to look forward to :eek:

My mind feels a little better now - most of above touches on money saving.
Slight change in OP plans. All funds generated by Tilly Tidies, equivalent money off through vouchers, selling stuff, will be paid off capital. Large OP will be saved in offset.

Hi Tilly,
Never thought of doing crème fraîche in the fish pie. How foolish of me! And dill would really pick it up.
It was my own recipe - just onions, fennel and peppers sweated down, 2 fish stock pots, and 4 bay leaves, then poach all the fish in the liquid until done.
Put in a pie dish (and one for the freezer!) and pour the liquid over. Then a layer of macaroni pasta to soak up the stock and bulk out.
Top with mashed potato.
It comes out quite creamy without the crème fraîche but with, it'd be highly deluxe!!!
