I want to make cassoulet and Delia has a scaled down recipe online. Perfect! Except, she says you must soak the dried cannellini beans for 2-3 hours. When do I have 2-3 hours free?
Can I soak them all day when I'm at work, or will this destroy them?

Hi 3plus1,
Soaking them for the whole day will be fine. I have been known to soak beans for 2-3 days! (When I've planned to do something with them in the evening, and then got distracted or forgotten I was going out!) As long as you do them for a minimum of 2-3 hours you should be fine.

Help! I planned to have pork stroganoff tonight, have defrosted the pork fillet and thought I had everything, discovered the sour cream might be a bit too sour with a use by date of 24th! Can I still use it, or should I think of an alternative?

I find soured cream is normally fine a few days past it sell by date as long as it has been kept in the fridge the whole time. Just give it a sniff and see, you will soon know if anything is wrong with it!0

Ok, what's the difference between Coconut Milk, Coconut Cream and Creamed Coconut?
I have a recipe calling for Coconut Cream, but only have the other two and some Coconut Milk Powder. Which one do I use?
