How do you make the veg stock?

I just used all the peelings (which were a small amount of potato ones, parsnip, carrot ends, outter cauli and cabbage leaves, leek ends, a few slightly manky looking cherry tomatoes, onion tops and skins, a whole onion copped and a couple of celery stalks chopped). Popped them in my stock pot with a generous sprinkle of mixed herbs, a good grind of salt and pepper and around three pints of water. Brought to the boil, simmered for about half an hour and then strained. I then reduced the remaining stock down until there was just a pint of liquid left.

Have found a small fresh beetroot sitting in my veg rack - I bought it a couple of weeks ago - no idea why,never cooked them but I love them pickled:o.
It's slightly squishy to touch.......
Any ideas what I can do with it ?

Kitty - do you have your own chickens? I wish I could get eggs for 4p each!!!
Seriously, if you do, is this how much the eggs work out at when taking costs of keeping the chickens into account? (I'm seriously wanting chickens - have been for ages!). TIA
Nothing else thrown away in the Rising household:j. Made a huge pot of soup with stock from the chicken bones and threw in all the veg that was left in the fridge.

Hi, we grow our own, you can cook them by boiling until you can get a fork through. It takes a while and you do have to top it up with water and keep an eye on it, otherwise you will for ever have a pan just for boiling beetroot [STRIKE]burnt[/STRIKE]
If its still got leaves the tear these off by twisting, don't use a knife or scissors as they bleed.
Once cool the skin peels off then you can slice and open freeze. Then bag up and just defrost a few peices as you want.
Or slice and put in jar with pickling vinegar.0 -

nope they were just cheapy ones from lidls 80p for 10 .. thats 8p right? or is it 16p? threw 2 away ...... today is not a day for maths :rotfl:
wish i had chickensand ducks i love them , no garden at the moment im afraid though, had to buy the battery caged eggs last week due to SEVERE brokeness :eek:

Gave DH pasta with gremolata last night. Gremolata - breadcrumbs, toasted in a frying pan with a little oil then mixed with finely chopped parsley, garlic, lemon zest, crushed garlic and a tiny bit of chilli. Splosh a little bit of oil over cooked pasta and a dash of lemon juice then liberally sprinkle with gremolata - cheap, tasty, and really quite sophisticated!0 -

I had to throw away 4 tomatoes today, first things i have had to throw away this week. I am quite pleased with that. Since finding this site i have started to be careful but there is always room for improvement, for me anyway.
