Somewhat off subject (feel okay doing it though! 😉)
Knowing that many of us are struggling at the moment with the lockdown restrictions - 26 years ago today, I lost one of my best friends (who was only 27 years old) to a malignant brain tumour - one of the last things he said to me two days before he passed was that every time I was feeling crap about my life, I should remember all those people who would give anything to be in my position - crap or not - I'm alive, loved and get to see the sunrise.....wisest words that have ever been spoken to me and they resonate greatly at the moment and worth sharing......

Wise words indeed Squirrelgirl. Hope that you reminisced over good times that you had with your friend and raised a glass or a cuppa. Life is too short, we should look at all the good, and try not to dwell on the bad, difficult though it is at the moment.
Am desperately trying to see the good in me still being awake at almost 3 a.m.

Joedenise....experiment with red lentils will have to be started off again, the dashed things fell into the sink.
Can't say that I was impressed by their progress so far today though, thought there would be more sprouting since yesterday, but I will try again. Will teach me to faff about with things on very little sleep.

It seems back to normal outside today. Lots of cars on the road and lots of people walking around.
I had a vegan sausage sandwich with roasted veg for brunch. I'm making chilled green tea to have in the fridge to have throughout the day.2025 GOALS

Joedenise....red lentil sprouting experiment is a complete disaster. Went out shopping for the first time in absolutely yonks. Came back and the house had a damp, musty smell. Was everywhere checking sinks, under kitchen sink, toilets, showers - the red lentils were the source, but did take me a while to realise. I tried for the sake of my little grand daughter, but it will never be repeated...will stick to brown and green lentils and mung beans which work for me.
On the bright side, I bought a load of salad veg and lots of strawberries. Was in 7th heaven having a salad which was not just cabbage, carrot and onion with maybe a bit of pineapple thrown in from the freezer.2 -
Definitely won't be trying the red lentils!! 😂 I had to go to the shop today and picked up a large reduced pack of coriander so bunged it all into the processor with garlic, balsamic and olive oil. I've made some buckwheat and will roast some butternut squash tomorrow to have with it drizzled with the coriander dressing 😁
My veg beds are almost completed (they've been built now and the lads are back tomorrow to finish the area and fill the beds with compost) so hopefully I'll have loads of fresh veg within the next few months and moving forward!
Need to get some strawberry plants now - mainly to eat as I pick and for dehydrating- but have never put them in salads before... now you've mentioned it toastlady, I quite fancy them 😂

Might just be me Squirrelgirl, but it certainly is not something I will be trying again.
As for strawberries in salad....it does sound a bit weird, but it kind of works with a bit of peppery rocket and other salad stuff. A wee splash of pomegranate vinegar tops it all off nicely. Am sure that another fruit vinegar would just be as good, just that is my favourite.3 -
I love fruit in salads toastlady - doesn't sound weird at all to me, I'd just never thought of using strawberries! No idea why, although it may be because they never seem to last for more than an hour or so in our house! 😂 I adore flavoured balsamics and make my own every year - I did a blueberry one and a raspberry one last year (plus a combo bottle of the two) and they were absolutely beautiful 😍 I've also got an orange one that I did at the beginning of this year that I am currently using - only a small bottle left now though so I need to make some more.I haven't made a pomegranate one yet as I think that a white balsamic would be better for that and I always forget to order it! 🙈 I pickle beetroot in it too - hopefully I'll have lots of beetroot this year as I want to make lots of jars of it!

Thanks for the feedback ToastLady about the red lentils. Think I'll be giving them a miss too! Will try and get some mung beans to sprout as I'm sure DH would be OK with those as I think someone said that's what the beansprouts you buy in the SM are.
I love flavoured vinegars. I usually dress my salads with vinegar of some sort (I try to avoid oily dressings). I'm using a walnut one I bought last year when I was in France at the moment. I did have some raspberry but that was finished some time ago and hasn't been replaced. Really must get round to getting some more flavoured ones.
