Am making a lentil shepherds pie for dinner tonight.  There was a small portion of the onion soup leftover so I've whizzed it up with a bit of extra water and will use that as the stock for cooking the lentils, carrots, onions & celery for it, topped with swede & potato mash and will serve with green veg of some sort.

Sounds lovely Joedenise, not made a shepherds pie for yonks. Will have to be put on the back burner for a while until I get freezer space. Great idea of using up your onion soup as stock, wouldn't have thought of that.

I can't get swede or turnip, just seen frozen swede at times, but have found kohlrabi which is a good enough alternative, as it has a sort of similar taste. I did that for a Burns night, mashed potatoes and kohlrabi with veggie haggis and gravy. My other choice would have been mashed potatoes and carrots, if I couldn't get kohlrabi. You just can't have plain mashed potatoes on Burns night!  :p

Didn't use the swede in the end as forgot to get it out of the freezer (I froze it myself not bought!).  Carrot & swede mash is really nice too but DH doesn't like it unfortunately.

Made far too many lentils so have added some spice to it and will freeze once it's cooled down to use another time.  Not sure what I'll do with it but it can stay in the freezer until I make a decision!

Joedenise, what a shame you forgot to take the swede out, been there many a time with freezer items. Never had a swede and carrot mash, but now that you have put it into my head, I may try that using kohlrabi, although not sure if it's available at the moment. I do still have some in the freezer...was saving it for my last portion of veggie haggis.
I ended up having a picnic tea with home made oatcakes, cheese, pickles & chutney, and then some lovely strawberries which a friend had dropped off for me. I did finally get round to making a load of dog biscuits, so my furball will be happy.
I'm going to try and get the contents of the freezer down a bit over the next week, so that I can get back to seeing what is actually in there.

I just wing it with measurements. Wholemeal flour, oats, dried or fresh mint, tbsp or two of olive or sunflower oil, 1 meat stock cube dissolved in hot water. I usually add brewers yeast powder, but have run out. Mix it all to a dough, roll out and cut out shapes with cookie cutter, or cut into whatever shape you like, strips, squares whatever. I don't bother with fancy dog bone shapes, the dog doesn't care. Bake about 10 mins each side fan oven 150C. Allow to cool on rack before storing in container. I usually do a big batch, store some in fridge in container, rest go in freezer.
I tried with just plain water, rather than stock cube, and my fusspot was having none of it, turned her nose up. A bit of a cheek for a stray who had been living on the street for a couple of years!
The mint is a breath freshener. The brewers yeast to deter fleas and mosquitoes.
