Vegan Store Cupboard Challenge

I couldn’t be bothered to cook either so I mixed the remaining buckwheat with the rest of the coriander dressing, chopped an avocado into it and drizzled with balsamic - very nice and took less than 5 mins to prepare!
Hope your yoghurt works well again toastlady- the only time I eat yoghurt is with spicy food and I always add a mint sauce to it 😂 - my dh loves the stuff in all forms (he's not vegan) and can eat one of the big pots in one go! 🙈
Not sure what I'm going to cook today but I think it will involve potatoes of some description- I bought a small sack recently to share with dil but they've started to sprout already! I can never keep spuds - my house is too hot and I don't have a shed (I do, but the doors don't work and the wildlife pretty much use it as their home - scares the life out of them when we get the lawnmower out! 😂)
Anyway, I'm going to use some potatoes today and peel the rest to dehydrate - just hope I have enough jars to keep them in 🤔3 -
I used to have that problem with potatoes but in our spare room we have a small corner which doesn't have any carpet on it and we have a concrete floor so I keep my sack of potatoes (paper sack not plastic or woven) on that which keeps them cool.

I am running low on food so we got a pizza yesterday and I had some leftovers for breakfast.
I have hardly any food left until my Ocado delivery. I have 2 vegan sausages, half a cucumber, three red onions and a bag of frozen peas. Suggestions?
I do have a lot of cupboard food.
Oh yes, I just remembered I have a powder mix of cashew cheese sauce and I was going to do pasta with the sauce and peas and onions in it. Mac and cheese, kind of.

Sounds like a plan! You could also chop the half cucumber up and add that to the sauce as well.Wednesday2000 said:I am running low on food so we got a pizza yesterday and I had some leftovers for breakfast.

Depends on what your 'cupboard' food is 🤔 you could cut a couple of the onions into thick slices, mix together some olive oil, coarse grain mustard and a bit of maple syrup and bake in the oven - you could serve with a cucumber and mint salad (or any other herb you have) dressed with a rice wine vinegar dressing; you could make sushi if you have the stuff in your cupboard using the cucumber as the centre; chop the sausages and add peas in a rice dish; pea and ginger cannelloni...Wednesday2000 said:I am running low on food so we got a pizza yesterday and I had some leftovers for breakfast.

Just a few ideas but may not be possible depending on what your cupboard holds! 😉2 -
Ooh WED , You've just reminded me, that I've got a micro Mac cheese in the freezer.Might have that later
Will bung some bits of courgette, onion n chilli in .
PS I don't usually get ready meals but it was a YS bargain 😉😂"You can't stop the waves, but you can learn to surf"

Ooh! And that reminded me that I got some micro chips with my first online delivery back in April, because they didn’t have any oven chips for some reason! (Lockdown stripping mania was clearing out the shelves). I was desperate for some treats at the time!candygirl said:Ooh WED , You've just reminded me, that I've got a micro Mac cheese in the freezer.Might have that later

They’re in the freezer, in the ice cube tray, so I forgot about them. Will go and have some, methinks!(I just lurve spiders!)

Squirrelgirl, hope that you've had success with your potatoes. I sometimes used to plant potatoes which had sprouted in a big bucket. Nowadays I buy individual potatoes, max 4, unless they are baby sized, i don't go through a lot, and a bag would be completely wasted with me.
Yoghurt seems to have turned out well again, thank you. Currently in cheesecloth draining in fridge. I love yoghurt, so long as it's nice and creamy, and have it as savoury and sweet. Love it with a pile of freshly chopped fruit salad, or at the moment with strawberries, as they are in season and so good. It's nice as part of a meze with roasted aubergine mashed up and mixed in, a nice little variation, but do grated cucumber/spring onion versions, and mint is a nice little addition.
Wednesday, hope that you managed to make something tasty with your food. I saw your post yesterday, but my brain was frazzled, and couldn't think of anything. It's not much better this morning right enough, not had my coffee fill yet. 😂
Temp suddenly soared from a very pleasant around 25C to 39C yesterday, and forecast is high temps for the week, not normal at all. It was totally draining, so very little got done. Dinner was just a stir fry, and for once, I did manage to make only one portion, but could only eat half, so saved it for later today.3 -
Toastlady 😮😮😮 where do you live???? That's insane! 🙈 (the reptile in me is slightly jealous! 😉😂)ToastLady said:
