I'm not sure I really know what a pot roast is :o

Its basically a one pot roasted meal, or joint of meat. Delias got some smashing recipes. I love the chicken baked with 30 garlic cloves recipe. Its really something special.

This is absolutely delicious, looks impsressive and is easily transportable. I also add butternut squash half an hour before the end.

  • My suggestions would be beef bourginon or coq au vin with a potato boulongere ( they both then just need to be reheated).

For something different I'd do the above suggestion of Greek lamb and orzo, a lamb kleftiko with mini red potatoes or a pasticcio.

    Hi OP,
How about a tray bake type thing? Similar to fish idea at top of thread, but you could try these variations -
I do one with chicken joints, onions, chunks of potatoes, garlic, a drizzle of olive oil and the juice of a couple of lemons. Season well, throw in a lemon cut into wedges too and strew with thyme if you like it. Bake in a hot oven until chicken is well cooked and potatoes are crunchy.
Another is sausages, chunks of potato, red and yellow peppers, onions, courgettes/aubergines/squash if you like them - drizzle with a little olive oil, garlic and seasoning. Bake as above.
You could also do pork chops with a layered potato thing - slice potatoes thinly, layer into roasting tin with onion if you like, pour some wine/stock/water over, plonk a chop per person on top then season and bake for about an hour until chops are done and potatoes tender.
Or onion, bacon and potato hotpot...alternate layers of thinly sliced potato, onion and snipped up bacon to fill a casserole dish. Pour white sauce over the lot. Put cheese on top or in the white sauce if you like. Cover with lid or foil and bake for two hours, uncover after an hour and serve with frozen peas or something else easy. Delicious, cheap and filling.

Morrocan Chicken done in the slow cooker would be dead simple and you can serve it with cous couse which must be the easiest thing in the world to make.

Either that i would be tempted to do a chilli con carnie and take a bag of wraps with a tub or sour cream ........i love chilli in a wrap with sour cream...one of my all time fav meals

Was going to post the bbc goodfood link that other people have already suggested, I was looking for one pot meals too and found a great selection:

    and here:

My favourites are the pork and cider and spring chicken ones,
there's also a nice chicken pilau with brown rice.
    Great choice!
