    Chicken Casserole

    4 chicken pieces (I tend to use chicken thighs but I use 6-8 if they are small)
    4 rashers bacon
    1 onion
    1 can condensed chicken soup (I use Campbells but any brand would do)
    paxo stuffing

    Put the chicken in a dish with the chopped up bacon and diced onion. Pour the can of soup over and sprinkle paxo on top to completely cover. Cook for 1 1/2 hours or less if the chicken is cooked through.

    It's delicious - the soup turns in to a gorgeous gravy.

    Great with mash and some green veg.

  • 1 layer of corned beef

    1 layer of onions

    1 layer of beans

    Lots of mash and cheese on top

    Pop in the oven until the cheese is nice and brown

    Serve with gravy :) yummy!!!

    I admit that I am a really lazy cook and really like the idea of one pot cooking a couple of times a week, especially when I have a long day at work. The type of dishes that can either be eaten with rice, or nice crusty bread. I've got a slow cooker.

    But my Mother has a bit of a thing about one pot recipes and sees them as a bit bland and basic. I think she is thinking about the stews, etc that her mother used to make. Has anyone got any ideas for one pot recipes that are a bit different from the "normal" stews and casseroles? Pref those involving chicken as she likes chicken and is not too keen on red meat. The posh bit of the title is because I would like to cook one on Saturday for dinner and we usually have something a bit err posh on a Saturday :rotfl:

    One of our favourite slow cooker recipes is as follows

    A layer of thinly sliced potatoes (I don't peel them) (amount depends on how hungry you are)

    A layer of sliced leeks (I use 2 large) again depends on how hungry you are and the size of your slow cooker

    If you have any red peppers, that need using up, cut them up and pop in between leeks

    Salt & pepper, mixed herbs and a couple of stock cubes between layers

    2 mugs of cider and water mixed poured over

    6 chicken thighs with skin, but trimmed placed on top.

    Put slow cooker on high for 5 hours and then pop in oven without lid for 20/30 mins to crisp chicken

    Feeds 4/6 depending to how hungry you are

    Check out Delia's Spanish Chicken - chicken and flavouring with brown rice. Apart from being delicious, the big advantage is that it tolerates being left in the oven if you or another is late home.

  • I like this dish by Nigella. Not a slow-cooker job but it's quick to throw together, doesn't take all that long to cook so is just about fine for after work and looks and tastes like more work went it to it than it really did!
