    Hi everyone, I've got friends coming over for a meal tomorrow and not sure what to make as a main course - anyone got any favourite recipes you're willing to share? Was thinking of something with chicken that could possibly be made early in the day and just reheated. Thanks very much! :D

    I've just been trying to search for a "Basque Chicken Casserole" that I like, but it's from a supplement with Good Food magazine and doesn't seem to be on their website. Basically, you allow one whole chicken breast per person, seal them, shallots (a 250g pack for 4), 150 ml of white wine, a couple of peppers, a tin of tomatoes (for 4 or 2 tins for more) and bung it in the oven for 1.5hrs at 180 degrees C. (or you can let it simmer on the hob)

    How about Spanish Chicken? This is really easy and you can do it in the slow cooker, microwave or oven. It's all a bit vague because you can change it as you go along!

    Chicken thighs (cheaper than breasts) - I allow 2 per person but 1 would be enough
    Chorizo (about an ounce per person) chopped into 1cm chunks
    A large red pepper, cut into 1" squares
    A large onion, sliced
    2-6 cloves of garlic, depending on your taste
    1 tin chopped tomatoes
    Rice (1 cup per person)
    1 cup of frozen peas
    Chicken stock cube disolved in hot water (about 2 cups per person)
    Olive oil
    Salt

    Fry the chorizo for about 3 mins, add onion and red pepper and fry for another 5 mins.

    Add the chicken and chopped garlic and fry for another 5 mins.

    Add the rice and fry for a couple of mins, then add everything else except the peas and cook slowly until the rice is soft. Keep checking that it hasn't dried out and add more water if necessary.

    Add the peas 5 mins before serving.

    Serve with a green salad and crusty bread.

    This is the most forgiving dish - it's almost impossible to ruin.

    MINCED BEEF STEW
    INGREDIENTS
    2 tbsp olive oil,
    1 onion, chopped,
    500g minced beef,
    2 tsp marmite, 1 tbsp
    HP sauce,
    1 cup water,
    2 large carrots, sliced,
    1 cup peas,
    8 new potatoes or 4 winter potatoes,
    salt and freshly ground black pepper.
    METHOD
    Heat the oil in a large pan and gently cook the onion until it is translucent. Add the mince and cook through. Add the marmite, HP sauce, water, carrots, peas and potatoes. Season with salt and freshly ground black pepper and cook slowly, covered, on a low heat for an hour. Add more water if necessary


    I haven't tried it but looks really easy to do - the recipe is courtesy of Jo, Ronnie Wood's wife, who cooks on the road, so has limited space and facilities:)

    Chicken casserole with new potatoes.
    Chicken thighs deboned
    1/2 a sweede
    5 carrots
    Large onion
    new potatoes cut in half
    2oz sr flour
    4 x chicken stock cubes
    2tblsp oil
    method
    chop chicken into chunks
    put flour in a bag and season with salt, pepper and garlic
    put i chicken and shake up to coat.
    chop all veg and potatoes and fry in a pan for 10mins
    place in large casserole dish.
    put oil in pan and heat put in chicken and fry till browned on all sides
    put chicken stock cubes in a large jug and pour on 2 pints of boiling water.
    once chicken browned put in casserole dish. pour over the water and put a little in the pan to make use of all the flavours of the chicken and pour this in too. Cook in oven about 150Deg for a couple of hours. Nice served with Yorkshire puddings. Good luck

    This sounds perfect for me. What kind of rice do you use?? does it matter??
    (is it like a risotto ??)

    Hi cat,

    One of my favourite chicken recipes (although not one pot as I usually serve it with mashed potatoes and carrots) is Delia's coq au vin. It's easy to make earlier in the day reheat when you want to eat.

    If you look in the slow cooker collection there are lots of recipes that should give you ideas. If you don't have a slow cooker they are easily adapted to cooking on the hob or in the oven.

    There's also an older thread that may help: Your favourite one pot recipe? I'll merge your thread with that one later to keep all the suggestions together.

    Use any kind of rice you like. I use ordinary cheapo long grain.
