    also used to do 'sausage casserole', in a saucepan heat a tablespoon of oil and add some sausages cut into one inch chunks. brown them and add a tin of beans and a tin of chopped tomatoes. Salt and pepper and Worcester sauce or brown sauce.
    simmer for about ten mins and serve with crusty bread.

    THREE TIN BEEF STEW

    Cheap, quick and easy, and also delicious, warming and filling. Useful as an emergency meal, especially if you have no water supply, as it uses the water in the tins. Also useful for camping or caravanning. Not recommended for backpacking, though.

    Makes 4 x 250ml bowls

    INGREDIENTS

    1 tin of stewed steak in gravy
    1 tin of new potatoes in water
    1 tin of sliced carrots, sliced mushrooms or garden peas in water

    METHOD

    Open the tin of steak. Put the steak and gravy into a saucepan.

    Open the tin of potatoes. Drain the water into the saucepan. Cut the potatoes into 2cm (1 inch) pieces. Add the potatoes to the saucepan.

    Open the tin of carrots, mushrooms or peas. Add them and the water to the saucepan.

    Stir thoroughly.

    Put the saucepan on a medium heat. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on the saucepan and continue to cook for 5 minutes until the potatoes are cooked.

    ADDITIONS & ALTERATIONS

    Add a beef stock cube.

    Add a teaspoon of dried parsley.

    TIPS

    If any of the potatoes are damaged, mash them up and add them to the saucepan. They will help to thicken the stew.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)

    If you take casseroles etc frozen they act as ice blocks in the cool bag.
    Can I mention Huevos Rancheros again ? (I am an addict)

    this is nice too
    Chicken Casserole
    a cooked chicken (either from home or supermarket)
    tin of condensed chicken or mushroom soup
    mug of peas
    about 4 oz of uncooked rice - or a couple or three packets of microwave rice (depends on how many you are cooking for)
    chicken or veg stock cube
    water.
    Mix the chicken, peas and uncooked rice into the can of soup - add enough water to cover and add the stock cube. bring to the boil and simmer for about 20 mins. if using the microwave rice add that just a few minutes before serving.
    as the sauce is nice and thick I like to serve this with cous cous made by putting one mug of cous cous to two mugs of boiling water in a bowl and covering with a plate for ten minutes, while the casserole cooks. or sending OH up the chippy!

    and a dessert? no cooking required!
    Ginger and Orange Mess!
    Drain a tin of mandarin oranges (you can use the cheapy broken ones for this), Crumble ginger biscuits and whip some cream (or use squirty). mix or layer the oranges and ginger biccies and top with the cream and for extra luxury top with some crumbled up Caddurys Flake!
    this was popular at home - not just down the 'van!
