I've made this a few times and it's always gone down really well - bbc good food - I've even been known to make without the chiicken or chorizo and with good sausages instead.

    Chicken & chorizo jambalaya

Another favourite is lasagne that always goes down well with friends and family, I use a couple of big ceramic dishes to make it in and serve it with a bit of salad and home made garlic bread.

Can't beat a good chickpea curry! Rice is easy enough to make in situ.

but instead of proper chorizo I use chorizo style sausages, they are often reduced or on offer

We're spending our first weekend away in our new/old campervan. I've tried / tested everything and the only problem we have is only one of the 2 gas rings works. Not a massive problem but struggling to think what I can cook on just one ring? (We have a fridge in the van so no real restrictions on ingredients).

    Any ideas? :)

Try Delia's Spanish chicken - a good one potter that re-heats well.

Or make something like a chilli before hand and take that so you only have to heat it through and cook the rice?
If you've have not made a mistake, you've made nothing

Oh, good idea. Never thought of batch-cooking. We're only away for 3 days so I could do a few chilli's / currys and then just heat them through. I've got some 'cheat' rice which would only take a few minutes to stir-fry whilst everything else keeps warm.

we used to like corned beef hash when we were down caravan - in a really large saucepan put cubed potatoes, carrots and onion fill with water and add salt and a stock cube. bring to boil and simmer til tender. Drain and mash the veg - cube a tin of corned beef (or just dig it out in chunks) and stir into the veg. a few drops of Worcester sauce a bit of pepper and its done!
or Spanish omelettes - just fry up your veg and add your beaten eggs and let it cook until set. depending on how thick you make it, it can either serve two or six - with a nice salad.

    Pasta.

Cook 10 minute pasta for about 8 mins, drain (but not too thoroughly, leave it a bit wet) and stir in passata/chopped toms/pasta sauce, cooked/tinned veg, cooked chicken/ham/pepperoni/bacon, cream cheese, and stir around till everything's hot and yummy.

Or if you have or can beg/borrow a steamer you can pile things up on the one ring.
A kind word lasts a minute, a skelped erse is sair for a day.
