What do I do with Rosemary?

    I use mine quite a lot now we've got so much of it.

    I chop potatoes into inch sized pieces in their skins and roast them with olive oil, rosemary and garlic. I add it to casseroles and soup and most things that call for parsley.
    May all your dots fall silently to the ground.

    I use it on roasted veggies.

    I cut up all the root veggies, put them in a bowl with a splosh of olive oil, a grinding of salt, and a good dose of chopped fresh herbs (rosemary, sage, thyme), and some chopped garlic. Then I mix with my hands until everything is coated in oil. I then leave like this until ready to roast them.

    You can also make rosemary mashed potato, by infusing some milk with the rosemary an d then using the milk (without the rosemary) to make the mash.
  • Oh I luuuurve rosemary! Was wondering if it's OK to cut whilst in flower though (sorry, this should probably go on the greenfingered board but as we were discussing it...)

    I wanted to add some to my Easter leg of lamb but because it's flowering in my herb garden, decided to go and spend mega money on a horrid little plastic bag full of sprigs instead :rolleyes:

    Does anyone know if it's ok to use while flowering, please? Thanks muchly!

    If you're having a bbq and fancy a change from jacket spuds, par boil some new potatoes, then make a sort of bag for them out of kitchen foil - drizzle over some olive oil (or could use butter), salt, pepper, and add a couple of sprigs of rosemary, seal it up (scrunch the edges so the 'bag' doesn't leak) and bung it on the bbq - when you open them up, they smell and taste amazing!

  • I like to roast chunks of sweet potato with a drizzle (or spray) of oil, some fresh crushed garlic and sprinkle of rosemary.
    If you think reality makes sense, you're just not paying attention!

    You can make a very nice pasta sauce with: 1 tsb chopped rosemary;
    medium finely chopped onion;
    2ozs butter;
    1 tbsp olive oil;
    400g tin of chopped tomatoes;
    1 tsp sugar;
    salt and pepper.

    Simmer for about half an hour if you can afford the time, otherwise just stir and heat through, serve over your favourite pasta.

    We're hacking the garden back today to enable us to plant lots of lovely veg, but our rosemary bush is immense...we are intending to dig it up and replace it with a much smaller plant - can anyone give me any ideas of what to do with A LOT of rosemary - other than drying it and using it a stick at a time?

    you could dry it out and put it in small bags then sell it on ebay, in the wicca section. the ammount of rosemary i have brought is unbeleivable.

    or advertise it for sale to armoatherapists most of us will make it into oils (if theres enough)

    I wish you lived by me, I would love it.
    Try putting it on Freecycle, but meantime it is really easy to take cuttings from it so you don't have to buy new.
    Just snip a few pieces about 4 - 5 inches long and put the in a little vase/jar or something with water in. Pull the bottom few leaves off. In a few weeks you'll see roots coming through.
    I did put a quarter of a teaspoon of sugar in the water when I did mine, I don't know why, but it worked

    You could always trim it right back?

    It freezes really well. If I end up with a glut of it I snip bits off, put it in sandwich bags and freeze it. Then you can take it out and put it in casseroles, soups etc straight from the freezer!
