    I think all my "liven up mash" ideas have already been mentioned (celeriac, parsnip, horseradish etc) but I have only just perfected rosti potatoes:

    Peel then grate your potatoes into a tea towel (manky old but *clean* one). Squeeze over the sink to get rid of all the water.
    This is the latest revelation - melt a generous knob of butter & mix into the grated potato. Then spread the potato out in a frying pan & fry on both sides til browned. Resist the temptation to fiddle with it too much or it won't stick together properly.

    Left over mash ideas:
    Potato and Carrot Pancake:
    Add cooked carrots (diced small or even mash IN with the potato) to your mash. Place in a frying pan with a smidgen of melted butter/olive oil and cook slowly until crist. If you prefer you can back it in the oven until golden.
    Potato Croquettes:
    form into sausage shapes, dip in egg, coat in breadcrumbs and fry in hot fat until golden.

    Potato Fingers:
    To each 1/2lb mashed potato add 1oz flour, season. If it needs "binding" add a dash of milk. Shape into fingers, brush with some egg/milk and bake in a hot oven for about 10-15mins - until brown and crisp.

    Try putting "potatoes" into the search box on Delia. Gives 16 pages of recipes containing potatoes, though not all answer your question. Some do though and you might get other potato ideas/recipes too :)

    peel and thinly slice potatos

    layer in an oven dish with grated cheese and onion

    top layer to be cheese

    mix a small tub of single cream with equal amount milk and pour over then bake in oven for 1 1/2 hrs

    I've got a fan oven and bake this on 150 degrees, if top starts to brown too much cover it with foil to finish cooking

    tastes delicious, I've even used uht cream or elmlea

    Page 4 of the slow cooker thread has a cheesey potato bake recipie that I tried at the weekend and was lovely. I didn't have any leeks but I did have some swede so I used thin layers of that instead. I also couldn't be bothered sauteing the potatoes (it's another pan to wash) so instead I microwaved them.

    1. Copy the address you want to use
