    I don't know really. I think microwave cake is a bit wrong, somehow.

    I found 2 eggs made it taste too "eggy" so next time used one and was much better :)

    'idiots' guide to microwaveable upside down cake

    serves 4 very greedy people, or 6 if you are stricter with portion sizes and don't let your OH back for seconds and thirds :rotfl:

    take a large microwave-safe bowl (i use a plastic mixing bowl as it's big so the cake has plenty of room to rise). grease the inside of the bowl lightly with butter or spread. line the sides and bottom of the bowl with golden syrup (i tend to dribble it down the sides - some sticks, most of it ends up pooled in the bottom of the bowl). I stopped using spoonfuls as i found it wasn't syupy enough for our tastes, so i do it by eye, aiming for about 1cm deep puddle at the bottom). decorate the bowl with pineapple rings. I start in the centre and work my way up the sides uptil i run out of rings. If it's a big tin, i'll chop any spare rings and add it to the cake batter, along with the pineapple juice from the tin.

    the batter then is just a standard sponge cake batter.
    100g butter,
    100g sugar (muscavado works best but i've used whatever i've had in with no ill effect. Muscavado just helps improve the colour of the sponge)
    100g self raising flour
    2 eggs
    3 tbsp milk

    blend the batter ingredients together, add it to the microwavable bowl. pop in the microwave and cook on high for approx 10-12 minutes. Cooking time will vary from microwave to microwave, but as with any sponge, you can tell it's done when the cake starts to come away from the side of the bowl and a knife inserted into the sponge comes out clean. you can, if you're feeling posh, put a plate over the bowl and turn the whole lot upside down, but i just dish it up from the microwaveable bowl.

    serve with custard or icecream. if by some strange miracle you have some left, it tastes even better cold the next day - sticky, gooey and sweet :D

    Just tried this, and I found it to be a little bit too sweet, think I put too much syrup in! I added quite a bit of pineapple juice from the can too.:D
  • I just have to share our pud from tonight...I got the recipe from recipelink.com so I can't take the credit - but it is G O O D! & FAST! & Also a microwave one...here it goes...

    AMAZING ALMOST INSTANT WARM BROWNIES AND ICE CREAM

    The warm, soft brownies provide the perfect base for slowly melting ice cream. A warning - these brownies must be eaten warm (for most chocolate lovers this shouldn't be a problem); like a lot of food cooked in the microwave, they will become rock-hard if allowed to cool."

    Nonstick vegetable cooking spray
    4 tablespoons unsalted butter, melted
    2 large eggs
    1 teaspoon vanilla extract
    1 cup granulated sugar
    1/2 cup unsweetened cocoa powder
    1/2 cup flour
    1 pint ice cream, softened slightly

    Lightly coat an 8x8-inch glass baking dish with the vegetable spray.

    In a medium bowl, combine the butter, eggs and vanilla. Stir in the sugar, cocoa powder and flour until combined.

    Scrape the batter into the prepared dish. Microwave on high power until a toothpick inserted in the center withdraws clean, 4 to 7 minutes, depending on the power and size of the oven. Transfer the dish to a wire rack to cool for 5 minutes.

    Cut the brownies into 12 squares. Place 2 squares in each of 6 dessert bowls. Top with a scoop of ice cream and serve immediately.

    Makes 6 servings

    I found this to be very true of microwave sponge puddings.

    Experiment gave me two solutions...

    1. This is primarily caused by overcooking. Especially since things tend to self cook for a minute or three after the microwave has switched off. The solution is to reduce cooking times by thirty seconds each time you make it until a) it's still properly cooked and, b) it doesn't turn into an imitation rock when cold.
    2. IF it turns into rock when cold... warming each portion on medium for about a minute and a half immediately before serving will soften it again.

    Another one who ended up with a gobful of earl grey on the keyboard! :T That made me proper laugh. You seriously would be slightly hesitant to eat that if you had dogs :rotfl::rotfl:

    I say hesitant. I would still eat it though, because it's chocolate cake. :p

    Made a great variation on the microwave 'steamed' sponge last night. Chopped an apple, cooked it in the micro with cinnamon, honey, sugar and water until it was done but not mushy, and the sugar/water/honey had made a thin syrup. Put the batter on top and nuked. Devine with cream!
