This challenge has really made me look at what I throw in the bin - not just food. I've sorted out the recycling box and have been using that and think I've talked DH into getting a composter for the garden so what can't be used again still won't be wasted.

Defrosted a random soup as I thought I'd need meal at work, turned out I didn't so soup went into a ricotta (whoopsied and I've never tried it!) and spinach (frozen in chunks, been lurking a good year or so) pasta bake along with a tin of chopped tomatoes, and a (stale) breadcrumb topping.
Feeling rather smug now! :rolleyes:

I have a pack of Sharwoods rice noodles, bought them as they are OK for my wheat free flatmate. Last time I tried to use them they were bland and horrid. Has anybody used these before? I've never used those type of noodles but could you use them up in a stir fry? Stir fry's are great ways of using up any old veg!
For tea tonight I made a vegtable bake with a topping of crackers as suggested by Ceridwen - it was lovely! DD ate all her dinner, sucess!!!! Made to much so am going to freeze it, not sure if that's ok but i'll give it a go!

Corrrrr! Oh well....I've got me uses;) Honestly an idea just straight off the top of my head...glad it worked.:D Suspect freezing it might lose the "crunch" factor from the topping - but, hey, it will still be edible even if it does. Maybe if the topping does lose the crunch factor in the process - then perhaps you could "skim" the topping off and do a short "re-bake" with a teensy bit of spritzing with added water for the topping in the oven and reheat the base bit in the microwave. Re-combine the two and hopefully all will be well. Again - just an idea off the top of my head, but think it could possibly work.0 -
Normally I would use up leftover steamed potatoes by doing something like frying up some onion, adding the potatoes and putting them in a flan dish and putting 3 eggs/bit of milk/bit of flour/seasoning whipped together on top and then some grated cheese and bake in oven for a bit.
However - am trying to lose (correction - am losing!) a bit of weight - so thats out at present (no frying in oil and no cheese - both too fattening).
Any other ideas please?0 -
I often have a 'vegetable omelette' for breakfast. I use any little bits of cooked veg left from the night before (or the night before before) like carrots, cabbage etc. and slowly warm them up in olive oil before lobbing a couple of beaten eggs on the top and cooking them through.
With a chunk of homemade bread, it's surprisingly delish.
Can I join you please ? Already doing meal planning and joining grocery challenge (been doing my own personal ones for a while now anyway).
