    A great way to use up cottage cheese is a pasta bake.

    I do a bit of passata on the base, cooked pasta (whatever shape) then cottage cheese mixed with an egg yolk (freeze white's for later use) scrapping of nutmeg and black pepper, mix add next to pasta, add some spinach which you have defrosted and squeezed as much water as poss, then add more pasta and add more passata.

    Delicious

    Everyone loves it, Also Simon Rimmer the chef uses it in the same way for lasagne

    Today i cooked a cabbage for tea (with pork chops mash and carrots) as it had been knocking around in my fridge and needed eating.

    I have a bit of mash left and a bit of the cooked cabbage left so i thought i'd make bubble & squeak tomorrow ....but i don't know how...can anyone help me with this?

    I've just worked out the yogurts and realised that we will have 2 left over by the sell by date if me & DH have one a day ( i really need to re-calculate how many i buy). Looks like i need to have yoghurt for breakfast tomorrow.

    Hi Kippers,

    I've got this recipie for bubble and squek, but I've never tried it so couldn't say if it's any good or not!

    mashed potato
    cooked cabbage and any other veg
    a bit of butter

    Mix potato and cabbage. Add seasoning and a pinch of nutmeg (optional)
    Heat butter in a frying pan and add the mixture. Either press it down into the pan to make a 'cake' or make small patties or even just leave the mixture loose in the pan.

    Cook for about 15mins or until it's browned nicely.

    Serve with a couple of slices of corned beef.

    That's a great idea!
    I often struggle with buying food and not getting through it as I am single e.g. bags of veg. This thread has really helped me use food more efficiently but also think about freezing things before they end up being thrown out. Yesterday I grated half a block of cheese and froze it as well as freezing fresh basil before I succeed in killing it off!!

    was a good girl yesterday.

    Took three apples that where a bit battered and brusied sliced and popped in a saucepan. Jucied the two dried up oranges and popped it in. And stewed them.

    Husband will have it tomorrow with some icecream.

    I was watching Jamie Oliver and saw that he never cuts the ends off carrots or rarely peels garlic and so on, he just bungs it all in. Like spring onions, I just cut to about an inch of the stalk and throw the rest. Is this right as I trim everything and now feel I might be throwing away some of the best bits?

    Tonight's random defrost turned out to be chicken thighs, so we had Thai green curry with paste and lime juice found in fridge.
    Also made little tarts with the end of the red onion chutney and a ball of out of date mozerella (sp?).
    need to find something to take to bbq tomorrow

    hi do you mean you throw away most of the green bit? if so all you need to do is trim both ends slightly and use the whole spring onion as you would normally.

    hi what is eggy onion? is it boiled egg mixed with diced onion as we used to have this in sandwiches when i was little.
