I've also got leftover sauces which I have been using as a spread on the mentioned created recipes (burgers and breads) made from previous freezer leftovers.0

I have half a bag of (whoopsied) carrots in the fridge. We are away for a few days and I know they wont last.
Has anyone had sucess with freezing them without first blanching - I just haven't got time.0 -
Just chuck the carrots in the freezer as they are, then when you have time you can get them out, chop them up and put in a home made soup with other veg. Sweet potatoes, carrots, onions and parsnips make a nice soup (use chicken or ham stock plus a bit of garlic and a bit of curry powder to season) - very warming with bread or toast. One life - your life - live it!0

I've been ill all week and hardly eaten anything other than bananas and tinned soup. Just checked the fridge veg drawer, ick, had to throw some stuff out, but what's left and getting a bit dodgy...
sad lettuce - is there anything you can do with it?
red and green peppers - I'd like to chop up and freeze, do I need to blanch first?
Pack of cherry toms, very ripe but ok, we'll eat some tonight, what can I do with the rest? Can they be frozen? Can I chuck them into a random soup freezer bag or will the skins/seeds be nasty in soup?
Also every time I freeze stuff it gets frosty and icy - even though I'm using freezer bags and I don't think the freezer is up that high (it's not all iced up). Is this just inevitable? Should I double-bag? Is it something I'm doing wrong? I've got two freezers and they both do it.
My lunch today is leftover jacket potato with cheese. It was supposed to be part of OH's dinner last night but I found him taking it off the plate and about to dump in the bin before he'd even started his dinner! (It was late at night, I'd left his dinner in microwave for him). Grrrrr. Little chat about waste - just because you don't want it right now, don't throw it out.Cash not ash from January 2nd 2011: £2565.:j

heretolearn wrote: »sad lettuce - is there anything you can do with it? you could try separating the leaves and soaking them in iced water for an hour or so - it sometimes perks the leaves up enough to make them edible again
red and green peppers - I'd like to chop up and freeze, do I need to blanch first? no, just chop and freeze - they'll be fine for throwing in sauces etc

Can I chuck them into a random soup freezer bag or will the skins/seeds be nasty in soup? they can be frozen and used to make soup - I did this with the last of my homegrown toms last year and it worked well. I personally don't mind seeds and skins in my soup but, if you don't like it, you can always sieve the soup to remove them
Sorry, I can't help with the icy freezing problem: I hope the above is helpful, though.Back after a very long break!0 -
