    I have HM pepper soup, leftover macaroni cheese. I will be having this for dinner. I have a little goat's cheese left so will crumble this on a salad.

  • Thanks for the Philly recipes Missblonde and Happy35. I just tried the philly on a crackerbread and thought it was really nice! On Monday I think I will chargrill a couple of red peppers that are in the fridge and then chop them up and add onions and the philly and make a pasta bake - kids should eat that for tea!

    Just found half a tin of corned beef in the fridge which is from two days ago so am chopping it up and mixing with sliced steamed new potatoes and chopped frozen leeks fried in butter and browning under the grill until crispy. A sort of crispy corned beef hash. That will do tomorrow's lunch and I won't have to go shopping!

    Cooked a roast chicken on Thursday for dinner, sandwiches Friday, and had the carcass and some meat left in the fridge today, with dd1 at a party and only ds1 and hubby to feed decided to pick the carcass and add to the Burrito kit that I had bought on offer a couple of weeks ago (supposed to be cooked with mince but completely changed the recipe to fit with what I had in the fridge!!) added sweetcorn, red and yellow peppers as thats what I had in, heated and then added the spice mix and sauce, grated cheese on top, pop in the burrito and hey presto. In the meantime, chicken carcass is in the pot with a few root veggies, peppercorns, bay leaf and herbs and hopefully will have a decent chicken stock later :j
    All for a good grade £3.75 chicken from Costco

    hi everyone just finished tea using up whats in the fridge and pleased to say i accomplished the above and with 3 empty plates first of all i i boiled 1 sweet pepper 1 large carrot and about 6 new potatoes untill they were soft then in a large frying pan i fried 1 onion 3 mushrooms 1 quarter of a pepper that was in the fridge few days with little oliveoil 3 cloves of chopped garlic about 30p tescos and sprinkle of 19pence mixed herbs value tesco brand .then when veg was soft in the middle i transferred to large frying pan and mixed all together please note make sure your veg is chopped small .season well with salt and pepper. then make a space in the large frying pan and using the lovely eggs from your hens or barn eggs crack open 3 or 2 depending on how many dining . when fish fingers of fish cakes are thoroughly cooked and piping hot plate up .withfishcakes on theside used up veg in the middle andlovely golden fried eggs over the top of the vegetables drink with that littledrop of wine or beverage leftover in thebottle just goes to show you can make lovely food with NEARLY NAFF ALL in the cupboard and have 2 happy family members so if you think things are tough have another look again and use some imagination when i first put all this together it didnt look that great but with garlic seasoning and some cheap 19p value dried herbs i felt like i had made a feast fit for a banquet happy cooking everyone:)

    Well done on using up what was in your fridge. :T It just shows what can be done with a bit of imagination. :)

    well sailor sam, if you had some mash as well, then beans with mash and crushed crisps and a little parmegiano reggiano grated in baked until golden and bubbly - mouth watering yet?

    Also every time I freeze stuff it gets frosty and icy - even though I'm using freezer bags and I don't think the freezer is up that high (it's not all iced up). Is this just inevitable? Should I double-bag? Is it something I'm doing wrong? I've got two freezers and they both do it.

    I find wrapping things in foil can help reduce this - doesn't need to be expensive foil - I guess it works on the same principle as getting the air all out.
    I stewed some Aldi rhubarb last week and have loads left over (kids thought it was sour) so I am making that into a crumble for after tea tonight - kids will eat that with ice cream.

    I make apple and rhubarb crumble - add some ginger to the fruit to give it a slight warming sensation when eating, and nutmeg to the crumble topping - it's yummy (imo :D) :)

    I usually used tinned rhubarb as have been making it out of season (and round here fresh rhubarb seems expensive in comparison) I stew the apples in the rhubarb syrup so no need to add more water or sugar.

  • Had corned beef and leek hash that I made yesterday for lunch and for tea I am using up leftover new potatoes and making a roast dinner out of:

    Quarter packet of Aldi goose fat roast potatoes
    bit of frozen brocolli
    steamed butternut squash (has been in the fridge for weeks but seems okay)
    a small chicken defrosted overnight
    sausage stuffing made from stale white bread made into crumbs, fried onions, dried sage and some sausagement found in the back of the freezer yesterday.

    I still have some crumbles left from the ones I made yesterday (I make individual ones as they last longer) so that will make a nice pudding with some ice cream from the freezer.

    I am well into this using up stuff mode - now I just have to use up some yoghurts, a pack of haloumi, the red pepper philly, half a bag of salad, half a cucumber, punnet of cherry tomatoes and the rest of the corned beef hash left from lunch.

    Don't get paid until Tuesday and have absolutely no money so will have to raid the freezer again and find what is lurking in there that will add to fridge and cupboard contents to make meals for tomorrow! I think I saw some belly pork slices in there before - do you cook them like ribs?
