You could try making croutons and see if it works - fry in a little oil/butter/both. Or coat with oil/butter and bake in the oven until cripsy

Crumb it in blender and use for stuffing, or for topping mac and cheese or for breading fish or chicken - you can keep them in a kilner jar for ages if you toast the bread first
