May I join you? So far this month, I have been using up leftovers each day (i.e. anything from last month and beyond). It will be interesting to see if this frees time for other things which need attention.0

5 days now and relatively no shopping but using up leftovers to free time is not as easy as I hoped but once "stock" becomes less maybe then? After 5 days have managed to use up allsorts and it feels good being away from the shops!0

I freeze lemons. You can chop them into wedges (freeze on a tray so they don't stick together) or my best trick is to cut into small slices and freeze each one in an ice cube - perfect for G&T or posh drinks!
Any ideas with what I might do with two tubs of cottage cheese, just past their sell by date but taste/smell OK? I'd rather cook them if I can - can you use them for lasagne/canneloni etc?That man is richest whose pleasures are cheapest. Henry David Thoreau0 -
I make cottage cheese into a pastryless quiche, layer of thinly sliced tomatoes in dish, layer of thinly sliced onion, peppers, mushrooms, sweetcorn, tin of corned beef, layered in, mix cottege cheese with 8 ish eggs, season, and pour over, top with grated cheese, bake gas 6 ish in centre of oven til firm.0

spiddy - there was a thread on here the other day about using up cottage cheese, which might be useful to you - it's here. I don't know if it's on the thread but yes, you can use it for lasagne etc - I sometimes use it on top as a lower fat alternative to white sauce, and it's not bad at all.Back after a very long break!0

Thanks CCP and Themull1 - recipe for the pastryless quiche sounds delicious. It is slow using up any one previous leftover - seem to have lots of one item. However, all previously frozen fried tomatoes have either been used or in the fridge ready to have. Two ideas were liver leftovers from the freezer with some of them or some were blended and put into a bread recipe.0

Whenever I am left just with the juice from tinned tomatoes I top up a container I keep in the freezer. When it's full I use it in place of passata to make a lovely tomato, lentil & basil soup.
