    Oh, thank you. Sounds delicious. So I don't need to use any cheese? Do I need to sweeten the mascarpone?

    You can put a little bit of icing sugar through the mascarpone if you like, but it depends how sweet you like things. Actually, you could mix it with the seeds and a bit of the juice.....maybe grate some choc on the top?!

    We don't like things too sweet so think I will just mix it with the juice and seeds and will sprinkle some of a flake bar on hubbys, will eat the rest of the flake whilst assembling them. Thank you so much.

    Sounds good too, but haven't got any meringues. Could make some tomorrow though as probably won't use all mascarpone and passion fruit tonight.
    Keep the ideas coming please as I just love passion fruit but never really know what to do with them.

    Mascarpone is cheese. ;)

    I'd mix the seeds from the passionfruit with the mascarpone, taste and add some icing sugar if needed and pile into glasses like a fool. You could crumble over some gingernuts if you have them.

    That made me chuckle. I should have been more specific, I was thinking I might have to add something like Philly cheese or cream. Hadn't realised I could use it without adding something else to it. I had bought it to mix with custard for a trifle as I love the flavour it gives, but didn't get round to making the trifle. Hadn't realised how versatile it is.

    Thought I'd share a lovely recipe from the old Nigella Express book that might help if you want to use up leftover Xmas cheese - Croque Monsier bake. I used Gruyere and cheddar as stated but sure you could sub them for whatever you've got in (am thinking of doing another with a wedge of stilton & cranberry that's lurking in the fridge) and leave out the ham for a veggie version (guess it would be Croque Madame bake then!), needs 6 eggs too so good if you have a box to use up.

    I made it last week and froze three portions individually, had one for lunch today and it just as nice, reheated it in the oven from frozen for about 25 mins, next time will defrost in the microwave first as it went a bit too crunchy on the outside - but at least it wasn't soggy!
