  • Oh my word, I have a lot to read!!! It is my new years resolution to waste less food. I made a good start today by cooking up all the veg that was on the way out and making it into a pasta sauce for my son. Right, off to page one I must go.

    Right, I have 2 questions for you all. Firstly, can I eat this - a packet of cheese and onion bakes, bought when reduced and frozen. Defrosted on new years day but then other food cooked and not eaten. Now they have been defrosted for 4 days and I am thinking they may be heading for the bin? I would usually chuck them but what would you all do???

    Also, I have almost a full block of cheshire cheese that I won't eat with crackers as it isn't crumbly enough! It's an asda one and isn't as yummy as the usual one I buy. So I want to use it to cook with, does anyone have any good suggestions?

    Most cheese can be grated or crumbled and added to a cheese sauce or made into a welsh rarebit on toast, or used as a topping to a jacket potato or for a pizza. Hmmmm ..... I have some cheeses (lots of stilton) leftover - think I might make stilton rarebit tonight.

    The cheese and onion slices will now be the equivilent of 4 days older than the day you bought them, might be ok I would try the smell test first. Break one in half and check it, maybe if you re-heat it thoroughly it will be ok. This is what I would do but you must decide what is best yourself.

    Rubber chicken is still going well, we had a reduced price chicken roasted for New Years day dinner, chicken pesto pasta last night, stock made and now soup to make and a little meat over (if I add some vegetables) to make some curry!

    Gaily - I am going to try to freeze some of my brandy butter as well! Fingers crossed as I did add too much brandy this time! :)

    Camembert is lovely taken out of the plastic wrapping, placed back into the wood box, a little white wine on top (could rub with a clove of garlic first) and heated through in the oven on a baking tray until melting. Just dip in veg sticks, bread sticks, crisps yum! I guess you could do this with wedges of camembert and pop onto a plate with a spoonful of cranberry jelly!

  • Can I freeze the cheese? Just thinking i could grate and freeze so I can use a bit when I need it.

    The cheese and onion things are bakes, on bread crumbs. They were fresh in asda, not cooked. I would have to cook them and test, hmm, not sure.

    Cheshire cheese can be grated (for easy use) and frozen in freezer bags! Just take out enough for whatever you are making each time! Stilton can be frozen successfully (for cooking) as well!

    Cheshire cheese freezes perfectly. Its delishious mashed into potato and also in a sandwich with salad cream (should i own up to that last one!).

  • Still using up stuff from over chrimbo...

    Made spicy pasta as had mushrooms and chillis that needed using up, along with some other bits I had at home. :D Was very tasty, altho it could have been a bit spicier. Have extra portion for tomorrow's dinner as I'll be working. :D:D

    Also used up loads of veg I had hanging around to make veg soup. Threw in a can of lentils for some protein. Will bung the breadmaker on tomorrow morning and have soup and warm bread for lunch. That should last for a few days too :D:D:D
    Might actually get the hang of this :j

    I have just been sorting my fridge and there is a tub of mascarpone and 6 passion fruit left over from New Year and both are still in date.
    Can anyone suggest something easy that I can do to use them up. Don't want to spend too much time in the kitchen this afternoon as been in there all morning, making marmalade, bread, soup and cakes so need to catch up on some other housework.
    However, if anyone has any suggestions that do take a while, then it may have to wait until tomorrow and I have more time.
