Just found this thread. so I too have a lot to catch up on! I am determined this year to cut my food bill and DH and I have a new mantra- it's not "what do I fancy for lunch/dinner?" - it's what is left over or needs using up!
My latest triumph was a portion of left over shepherd's pie and some carrots and peas which I made into soup! I just put it in a saucepan with a pint of beef stock from a stock cube, brought it to the boil, mixed well, turned off the heat and then blended with the stick blender.
Shepherd's Pie Soup - it gave us 4 big bowls full and it was delicious!0 -

I am absolutely determined to budget better this year and get some debts paid off! Made a nice soup last sunday out of a chicken carcass that I normally throw! Lasted 2 days - kids got fed up with it after the second day but hey, TOUGH! LOLMy LBM - December 2010!

mmm pepper soup comes to mind.
but personally I would make roasted veg to accompany a nice steak or chop or whatever YOUR vegetarian choice is!. just chunk up your veg, add some garlic cloves (no need to peel them, and dont worry if they get served as they will be lovely and sweet) salt and pepper and roast in fairly hot oven for about 35 to 45 minutes.
any leftover veg can then be used to make roasted veg soup with the additon of some veg stock and about twenty minutes simmering then you can either leave chunky or blend it smooth!0 -

Thank you that sounds nice. But I have now asked the veggie DS what he suggests and typically he says make it into pizza. It will be healthy (he reckons) with all the veg on.0 -

Made another batch of soup today - had a large sweet potato left over, so made sweet potato and carrot soup
It was absolutely delicious:T Plus I have enough left over for at least a couple more lunches too :T:T
Also made bread in the breadmaker ready for tomorrow's lunch as I'm on a training course and don't think it will be practical to take soup with me.I've got a couple of sadly looking avocados which I'll use then too.
