  • Not sure if this has been mentioned before, but there are some great tips on www.lovefoodhatewaste.com

Also if there is ever an event run by these people there is usually a freebie there for anyone attending the demonstrations. They have done a couple of events in Lincoln in the last couple of months.

Hi, I cooked a nut roast as part of Christmas dinner and now have about 1/2 left over (the whole loaf fitted into a 1lb bread tin). Apart from the obvious bubble n squeak - does anyone have any suggestions of what I can turn this into? I have some pearl barley and split red lentils in the cupboard - would be good to use some of these too if poss.

    Many thanks

Pastie/'sausage' roll type thingies - maybe nice for a packed lunch? Or maybe you could use some crumbled as a topping on top of a baked dish like a shepherd's pie?

  • You could just freeze it in portioned amounts to have at later date. That's what I've done!

You could try putting the loaf in the food processor with a bit of liquid (e.g tinned toms, soy sauce) to make a sort of 'spreadable' mixture to put on sandwiches (I freeze my sarnies in batches to save time on work days).

  • You could make a vegetable stew and in the last 20 or so minutes of cooking put slabs of the nut roast on top in much the same way that you put dumplings on. The roast should absorb some of the stew flavours and provide different texture. :)
