    usually soup, omelette or risotto to use up leftovers.
  • omelettes, pancakes, sandwiches and the favourite in our household; fried rice.

    I just tend to do a stir fry! a bit of onion and ginger some garlic, soy sauce and almost anything can be stir fried!with the addition of some noodles and if you have it some sesame oil - there you go - chow mein!
  • HM Pizza is great for using up odds and ends, your cooked chicken would have stretched a long way on one of my pizzas with some veg, onion and HM tomato sauce. Kids love it and it is really filling.

    One of my favourates is using up shappards pie!

    We always make enough for 4 people, and there are 3 of us! So on the 2nd day I take that 1 portion mix with a tablespoon of gravy, and then put 2 tablespoons of mixture between 2 slices of bread and toast with a toastie machine!

    We have left over mince on toast for lunch. I make enough now so that we can do that because son loves it so much.
  • I put all my small portions of leftovers into small Lock'n'Lock boxes and they go into the freezer. It's then Freezer Roulette for lunch at work :)

    As this has fallen from the front page of OS, I'll add it to the existing leftovers thread to give you more ideas.

    Not really related to leftovers, but I had some cakes that burnt while trying out some cupcakes for Halloween. Sadly, I put them in at the same time as a toad in the hole and didn't want to risk opening the oven door for fear the toad would sink. Anyway, I blitzed the cakes into crumbs and mixed them into leftover cake frosting and then shaped them into balls. I dipped these into melted chocolate to make cake balls and they went down really well!

    Try googling 'recipe strata' Basically it's bread, eggs and milk, then you add anything savoury you like, onion, bits of bacon, chicken, peppers etc and bake it. It rises up a bit and makes a tasty and filling meal. You can season it with all sorts, celery salt, garlic, anything. In Canada it makes a lovely brunch recipe. it would be good with a salad.

    I bought a bag of spinach at the weekend and made feta and spinach filo bites. They went down really well!

    We had some leftover feta and spinach mix so gave some to our pets (rats :)) and saved the rest for yesterday. Yesterday's dinner we had a slow roasted chicken with the leftover feta and spinach mix, chips (was feeling lazy about doing potatoes), stuffing and gravy! It was lovely! The chips were a nice change as well.

    Tonight we have left over chicken which will go in a stir fry. Tomorrow there is more leftover chicken and that will go in a curry.
