Gently fry an onion, some celery and some garlic until translucent, in some butter. Add the risotto rice and chopped gammon and coat in butter. Add hot stock a ladle at a time, until no more can be absorbed. Add a load of parmesan, season to taste, and add more butter if you likeServe with more parmesan.

We had the most random meal ever last night - all made from leftovers. It was:
roast beef
gravy
tinned tomatoes
baked beans
bacon
sausage
onions
glug of red wine
All put into the slow cooker for about 4 hours and served with potato wedges.
It was absolutely lush!! Mmmmmmmmmmm0 -
