    I hope this is the right place to post this:

    Hmmm help needed please, I have the following in my fridge and need a recipe! Am thinking something omelette-ish:

    Eggs
    Spring onions
    Wholemeal bread
    Onions
    Feta cheese
    Red spuds
    Red pepper
    Sour cream

    I'm meant to be doing my dissertation so am well up for spending the next 30mins to an hour cooking :D

    Make a fritatta, fry off the onion and pepper until soft, whisk up some eggs and maybe a bit of the sour cream and pour over the veg, at the last moment put chunks of feta into the egg mixture. Keep on the heat till the egg is cooked underneath, and then pop it under the grill to finish off the top.

    Its a bit like an omlette but thicker, and its delish cold, so you could have any leftovers for lunch tomorrow.

    Serve with bread and butter.

  • sounds like a fritatta to me! Someone might come up with something more exciting though. Don't worry the ingredients don't exactly match what you have, you can fling almost anything in there.

  • All for the fritatta! My best tip on those is to cover the frying pan and keep it on really low heat for about 40 minutes, so that you don't completely turn the bottom to charcoal while the top is raw!

    Fritatta is great

    I would have cracked the eggs onto some feta cheese in an oven proof greased dish. Sprinkled on some finely cut spring onions . Served with toast and red pepper

    OR are those spuds bakeable? Scoop the inside out mix with cheese, pepper, onion and bind with an egg. Put back in the skins, and bake for ten mins, and serve with sour cream

    OR Make a bread sandwich with the bread soaked in seasoned mixed egg and fry - with cheese and onion and red pepper in . Toasty eggy bready cheesey sandwich. Dribble.

    I did see on here a while back a link to a website where you can tyoe in what ingredients you have and it will rustle up meal ideas for you.If you dont like the first one keep going till you find something you like the sound of My search skills on here are naff so im not going to attempt to find it but im sure someone in the know will help.
