I do something similar to canidothis and make a risotto usually, but last time I made a cheese sauce and poured it over pancakes - mmm

If you have some ham stock as well, add in a handfull of orange lentils, small diced onion, couple of grated carrots, couple of diced potatoes, bring to boil then simmer until potatoes are nearly cooked then add back in diced ham.
This is a lovely soup served with hm bread.
Can be made with veg stock but the ham seems to seep into the potatoes.My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
Eldest son has his own house with partner & her 2 children (11 & 10)
Youngest son & fiancé now have own house.
So we’re empty nesters.
Daughter married with 3 boys (12, 9 & 5).

I'm fairly new to MSE so I hope you don't mind me asking the following question...
I have a dish of leftovers from dinner yesterday (which I'd normally have put in the bin, or in the dog). I have some carrots, peas and a small amount of mash. I have mixed it all together in a bowl and I intend to make some sort of fritter for tonight.
Can anyone help with how I do this and what else needs to be added to make it taste like something other than leftover veg? I intend to use the food processor to bind everything. ThanksCheer up. The worst is yet to come - Mark Twain0 -
I wouldn't process it personally as it might turn into some sort of gloop rather than a fritter
I'd use an egg to bind it together and then make burger shapes and roll them in some breadcrumbs. A bit of salt and pepper and some onion (fried already) would add to the taste or a dash of Worcestershire sauce. Pretty much anything goes though so have a scout around and see what you've got.0 -
These will all mash together nicely and fry up beautifully to make a different version of bubble and squeak. Nice with cold meat or a fried egg. I do mine in the food processor as well.
I sometimes make a soup from leftover potato, peas and carrots (or whatever veg is left over), just adding an onion and veg stock and whizzing with a hand blender after simmering for about 20 mins. HTH.0 -
I know this is spending money to save money, but one book has revolutionised my leftovers. It's called the Use It All Cookbook by Bish Muir and is a fantastic reference source for all sorts of recipes using leftover food. I find it really useful as it has an index of leftovers, and also includes basic recipes (how to make a pasta bake, how to make stock etc) as well as specific recipes (shepherd's pie, banana pancakes etc) . It's a really good jumping off point for deciding what to cook with what you have in the fridge.
I had pheasant rissoles last night from some old leftover bread, bits of meat left over from a roast and a couple of items of basic stuff from my storecupboard. Delish!0 -
when making rissoles I would use dried stuffing mix for a change instead of breadcrumbs to coat and fry them.Shape them,dip them in flour ,egg and the stuffing mix.Lovely with sage and onion.I usually buy my fancy stuffing mixes just after Christmas as they are always vastly reduced in price then
I usually coat pork fillet like this as well, and then bung in the roasting tin with a few potato's.Makes pork fillet streeetch very well as its very filling cooked like this.0 -
I find that adding hot chilli sauce to 'bubble and squeak' type leftovers really gives a kick. Also, I often freeze leftovers like this to bring out on another occasion (often as a meal for one when we need it). This stops the feeling that we're eating the same thing for days. My SIL often cooks extra on purpose as leftover type meals can be so delicious and it saves on cooking/prepping time when you're busy.0

If I have something else going into the oven, I often use the mash/veg mix with a few herbs and some grated cheese over the top and bake it on the 'spare' oven shelf rather than faffing about with frying etc0
