Sounds like the basis for fishcakes to me, if you have a tin of tuna or even sardines around. Mash it all together, then dip in egg and breadcrumbs and fry.

Or mash together, dot with butter and bake it. Potato mashes well with lots of veg. Just don't put potato in the food processer otherwise you'll get wallpaper paste.

  • As this has fallen from the front page of OS, I'll add it to the existing thread on leftovers ;)

I have fallen off of the left overs wagon a bit lately. Half of the time its only me for a meal now, and so I end up freezing DS's. But on Saturday I decided that I would have our own "take away" and using 3 chicken joints, I roasted them, then halved them, and used the meat from half in a Chinese style mix, then thought I would curry a casserole I had in the freezer, to make a beef curry. It turned out to be a curried Sausage Casserole! Oops. But we had it with noodles, curry rice, and plain rice. Most of the packet mixes are from Appr0ved F00d and are either out of date, or nearly out of date. But they all taste fine to us!.
Only thing that doesnt work are the out of date crisps. THey taste "soggy" and stale.
Must have a good look at what is lurking in the fridge, as all the meals this week have not gone to plan.!
When I die I will know that I have lived, loved, mattered and made a difference, even if in a small way.

I think you could use the crisps over a potato or pasta bake to give a crumbly topping, they'll crisp up again in the oven.
  • I have some leftover pizza sauce (basically passata plus garlic and herbs) and we're not keen on having pizza a second night in a row ;) Trouble is, the sauce has already been in the freezer and so I don't want to put it back in again until we need it next.

    So.

The plan is to get some white fish tomorrow (cod or some such) and do chunks of white fish with a tomato sauce and serve it with new potatoes. There isn't (at least I don't think there is) enough of the passata pizza sauce to make enough new sauce for two, so I'm not sure if there's something else I can do with it.

    Any suggestions?

Rather than cutting the fish up into chunks, you could keep it as fillets and spread the sauce over it - top with a little bit of cheese or breadcrumbs or peppers or whatever and put it in the oven or under the grill.

I used the last few slices from a going-stale homemade loaf to make eggy French toast for lunch today.

And the bargain reduce price punnet of plums became a pot of plum, ginger, garlic and chili sauce for the Sunday roast duck dinner. The punnet made enough sauce for 2 more portions for the freezer.
  • I am an avid follower of this thread by email. Could I pick your brains please?

I have some pretty old mulberry and apple crumble sitting in the fridge (I'm talking quite a few weeks). It was a bit short on sugar and so didn't get devoured by the family. Was just about to chuck it out, but realised it has not actually gone mouldy at all and wondered if it coudl be salvaged. Any bright ideas? It's probably fairly stale but perhaps could be revived in the oven somehow...?

Thanks in advance for any suggestions.
