Hi all
Ive got a tin of pinapple chunks in the cuboard and peach slices that are gonna be out of date soon any idea how i could mix these into a recipe to make somthing
ive got the usaual flour caster sugar eggs etc0 -

Hot pineapple pudding ?
2oz margarine
2oz sugar
½ pint milk
2 eggs, separated
Small tin pineapple chunks
3oz caster sugar (for meringue)
Make white sauce with the flour, margarine, milk and sugar. Mix egg yolks with the juice from the pineapples and add to the sauce. Boil up and stir until the mix thickens then add the pineapple.
Whisk the egg whites until light and fluffy and add the caster sugar.
Pour the custard mixture into an ovenproof dish then spread the meringue over the top. Bake in a medium oven for about 15 minutes till the meringue is golden.

Tins of fruit can be kept for years in the right conditions i.e. a cool and dark cupboard. If the tins aren't dented the contents can be used quite safely ages and ages after the "use by" date so there's no rush but the pineapple upside-down cake is a winner anyway0

i have a recipe in a book - savoury rice with pineapple raisins and turmeric in the rice. Scrum. Can post if you want it !A little nonsense now and then is relished by the wisest men :cool:

We ate a can of Big soup 2 years out of date last week .
I would't worry about using them , until you need them0 -
You can just eat them straight. I'd just pour them in a bowl together and call it fruit salad.
I agree with those who say they'll last for longer than the date on the can.0
