I had some plums and an orange going manky very quickly, so stewed the plums in the orange juice, cinnamon stick and sprinkle of brown sugar.
Made a basic flapjack (loosely based on Twinks hob nobs, but with less sugar and added linseeds!), put half in a dish, then a layer of the jammy stewed fruit and more flapjack on top! Tastes very good with ice-cream or custard, but I can't stop eating it!0 -

American style banana pancakes
120g self-raising flour
2 tablespoons white sugar
300ml milk
1 egg beaten lightly
20 g butter, melted
1 medium size banana mashed (as overripe and black as poss!)
1) Mix milk, beaten egg, mashed banana and melted butter in a bowl.
2) Add sifted flour and stir in, then sugar- do not over mix as will be lumpy from banana
3) Wipe a large non stick frying pan with a smidgen of butter, put over medium heat and then ladle some pancake mix in. NB: American pancakes are cooked in small rounds- slightly bigger than those scotch pancakes you get in packets so should fit about three separate pancakes in at a time.
4) Turn pancakes when small bubbles appear all over the surface of the pancake.
We had ours with a bit of honey or butter, but maple syrup also good for weekend breakfast, or toffee ice cream if making as a dessert.
Thanks so much for this (sorry I don't know how to thank posts properly), just found some maple syrup at the back of the cupboard and can't wait for breakfast tomorrow now! :T
We had left over goulash (sp?) that OH brought home from work (he's a chef, freebie leftovers is a great perk). I made some simple flatbreads to go with it, you probably all know how to make them but I'll put the recipe in anyway:
255g/9oz plain flour
2 tbsp olive oil
pinch of salt
(makes 4, I'd say one each for a normal portion, two for my OH at dinner and my leftover one later as an evening snack)
You just knead it all together with enough water to make a nice dough, divide up, roll out and then dry fry until golden and spotty and then I brushed them with garlic, chilli and coriander butter for a bit of flavour after they were cooked. I think they'd also be nice with leftover bolognaise and soup, and are quite quick and convenient when all you've got is flour and want to bulk up some 'wet' meals.Started Comping 25th September 2013.

I find using cups much quicker than measuring out and I love to use american recipes for this reason. Luckily a set of plastic cup measurements are usually easy to buy from places that sell kitchen items and also in the pound shop. You could you a tea cup, but would need to work out if it works out at 1/2 a cup or whatever first and then always use the same cup. Hope the blog is of use to you

Hi I have been reading the posts on here for a few days now and found it really inspirational I have always wanted to be less wasteful and save money and this thread has really helped and I am going to go for the challenge. So tomorrow I am going to go through my cupboards to see what I have before I even contemplate another shop. I am so looking forward to trying some of the recipes on here to0

Does he like eggs, fish, cheese, pulses in veg curries and casseroles etc?0 -
3 days ago I made a chicken stir fry using an Uncle Ben's Cantonese sauce with use by date of 18/07/07. I am still here to tell the tale. I didn't even buy it. I was clearing out my son's house that he rent's out, between tenants.0

Just wondering if there was a thread specifically designed for people to chat about what leftovers they had and how they used them up?
