Wasn't sure where to pop this, but I've been making this dish for years and it's yummy scrummy.
Leftovers: Eggs, cooked Ham (or bacon, or gammon), grated cheese, cooked rice, sweetcorn.
Beat eggs and add all other ingredients in whatever quantity you have to make a sloppy mess. It's best to use a strongly flavoured cheese.
Bake in the over at 150 until set and enjoy.
It's like a quiche without the pastry and with rice added to the filling.

I used to do a similar thing with bits of left over ham, spring onions, peppers, cheese, sweetcorn etc.
I'd mix it with enough egg to make a stiff mixture then put it on 6" lengths of french bread sliced down the middle. Put it under the grill and you get a french bread pizza.

I like the sound of this thread, after seatling down to read this I have been inspired and have decided to use up everything I can.
After searching through the fridge for what needs using first I found a corgette, wrinkly spring onions and low fat fromage frais, tea tomorow is going to be: creamy pasta:
garlic, grated corgette & springonions cooked with some frozen peas added. add some cooked spaghetti stir in the fromage frais with some lemon juice. sounds nice, hope it tastes it!
Have some sausages to use for tuesdays tea!

Welcome GMG - sounds like you've got the right idea already! This thread is a great source of inspiration - also when you have to "report back" you're far less likely to waste stuff. For me, the scariest thing is seeing how much less stuff is ending up in the bin nowadays! i hope twink doesnt read this post because heaven forbid i made some hobnobs and the recipe made absolutely loads like 5 baking trays however i did but the ones that got leftover i decided to use them as a crumble topping and omg it was sooooo yummy i will be doing this again even if it means hiding some from my fam just so i can top the crumble lol0
