There is a bit more to making a "cathedral" effect than pulling down the 20mm (?) plaster board, Unless you want to expose a forest of ties and struts.
Your would need an "active ridge" and considerably "taller" common rafters. Then you would need to up the "U" value of the considerably increased thermal envelope of the building.
Something like "Celotex" might do the job at a price, because you won't want to be into the "frozen smoke" level of "lambda" values.
Do it soon before the regulations get changed once more.

Pity there's no room plan, I'd like to have seen where the lounge/diner that's over 60' long fits in.:rotfl:
