Hi all, hope you are enjoying this wondeful spring sunshine:T
Well I have a quick question for you all, if thats ok? I roasted a chicken for dinner yesterday( worked a nightshift last night and knew I wouldn't want to cook anything major today) and I have loads left over for dinner tonight. The thing is I want to make a nice pie style dish, I think and wondered if any of you lovely ladies/ men have any ideas about what I can do with my leftover chicken, lol.

Forgot to add I have most basic ingredients, stock, onions, garlic etc I also have two tubs of philly light I want to use up. So any ideas with philly would be fab!

Hi empy,
You could use the chicken, some veg and cream cheese to make a base for a pie topped with mashed potatoes. Or what about a pasta bake using the cheese to make a creamy sauce?

Thanks pink-winged, I have decided to adapt a recipe I found in the recipes section on here - the brocoli and chicken bake from Moniker, I added some crushed garlic and some chicken stock and lots of diffrerent veggies so my boys get in all their 5 a day, lol. I will definatley be looking at the rubber chicken thread and get some ideas as chickens are really, really cheap in the coop at the moment and I have a very tight budget this month due to an overspend on holiday last week : (.

I sometimes make a pie....i mix leftover cooked chicken with cooked onions, mushrooms or leftover veg and mix in a basic white sauce and then top with pastry or leftover mash...lovely0

you may like to try my cheat chicken and mushroom pie
as much cooked chicken as you can spare
some mushrooms or tin of mushrooms (optional)
can of campbells mushroom soup (condensed)
half packet of frozen puff pastry or 4 ozs of pastry of your choice.
put the chicken in a pie dish and add the mushrooms either sliced or if tinned left whole.
add the tin of mushroom soup
roll out the pastry to fit the top of the dish.
bake at gas 6 for about 30 - 35 minutes.0 -
With the philly I would probably make a creamy pasta sauce, maybe with some bacon bits and broccoli or other veg in it, and loads of freshly ground black pepper.

I normally boil the bones to make some stock, then pick the chicken off the bone to make a chicken pie, it's surprising how much chicken is left on the bone! I make a white sauce, which is basically just butter/marg, flour & milk plus seasoning, then sometimes add chopped up cooked bacon, peas or sweetcorn. Hi there,
I'm sat feeling a bit disappointed at the moment. I had my first attempt a a 'rubber chicken' type meal plan this week. On Monday, I cooked a fantastic roast chicken, and used some of the leftovers for tuesdays sandwiches. Stripped the carcase of all the rest of the meat and made stock from the bones.
BUT I made the leftover meat into a curry tonight and it was disgusting... the chicken had a horrible texture to it and I couldn't eat it. Because it was all mixed into the sauce and had crumbled a bit, we chucked the lot away and have just ordered a chineseas I can't be arrised to cook twice in one night!
Is that normal for the chicken to have an odd texture like that after 2 days refrigeration? It was fine in the sandwiches. Any ideas for recipes that hide the slimyness better?
I think I'm gonna go back to cooking chicken breasts for sunday dinners!

Hi Silaqui,
I find cooked chicken can go a bit stringy if it's cooked for too long when it's being reheated, so generally I would make the sauce and add the chicken at the last minute and just make sure it's completely heated through.
