    Mmmmm... this sounds really good Lynz. We had roast chicken today too and I think we'll be having chicken lasagne tomorrow!

    There are zillions of ways you can use up leftover chicken but one of the simplest is just to have it cold with some big chunky home-made oven chips and a lovely big colourful salad or a big tray of roast vegetables.:j

    Hi

    I am starting to try and be more frugal but don't have the background knowledge yet so need some help please!

    We had a small/medium roast chicken yesterday and we have half of it (a mix of breast and leg meat) left over. Normally I would pick at it / use it in a snadwich but I was wondering if there was anything else I could do to make a tea tonight. It's just me, my hubby and my 8 month old baby (who can pick at things).

  • hmmm, curry, fajita's, caesar salad, pie, pasties, pasta

    any of the above, maybe strip the meat off and start with pasta, maybe witha tomato & chicken sauce and you might have enough to use some of the meat tomorrow too.

    and i'm sure tyhere was a thread about this but my search is fritzed atm

  • I always freeze my extra portions of chicken to use in anything and everything that requires a chicken breast/meat. So cajun chicken and rice, chicken & bacon and potato hot pot, chicken pasta bake, chicken curry, chicken in red wine sauce, creamy chicken and pepper couscous.......as you can see we eat a lot of chicken!!!

    curry, pie, or stir fry.
    And don't forget to use the carcase for stock or soup if you have enough chicken left on the bone (wings, and legs are ideal for soup)

  • See, I am a novice, I didn't realise that you could freeze cooked chicken! It's been in the fridge since yesterday could I still freeze it?

    Ok having made the pie (which turned out ok but I didn't make enough sauce) we couldn't eat it all - so my next question is, does anyone know if tesco's hot roasted chickens have been previously frozen? as would like to freeze the leftovers. We don't really like to eat the same two days in a row.
