    Ha ha, I'm not that weird. I didn't post straight away, and we weren't having it as a roast dinner either ;)

    BIG THANKS! To every one on here. I cooked my 1st rubber chicken weekend just gone.

    Saturday: Roasted whole chicken. DS, DD had a leg each i had the meat from underneath. DW at work.

    Saturday night: Carcuss in slow cooker with water from veg from dinner plus a bit more.

    Sunday morning: Pick rest of meat off carcuss and put in stock. Stock then went in fridge.

    Sunday: Made chicken and pea pie for freezer with one breast.

    Monday: Chicken and Chirizo pasta bake with 2nd breast.

    Tuesday: Put chicken stock back in SC added sweetcorn, noodles and seasoned. 2 hours later after dog training had lovely hot chicken and sweetcorn soup waiting for us when we got home.

    DW was very impressed and said it all tasted fantastic.:D

    I even impressed myself.:T :T

  • The final stretch of a rubber chicken. A simple, quick and easy recipe for chicken soup, using a leftover chicken carcass. A basic broth can be made with just the chicken, water, onion and pepper.

    CHICKEN SOUP

    4 servings

    INGREDIENTS

    1 onion
    At least 2 additional vegetables (see below)
    1 roast chicken carcass
    1 litre of water
    1 chicken stock cube
    1 teaspoon of any herb
    Ground pepper to taste

    METHOD

    Peel the onion and chop it into big pieces. Peel the other vegetables, if required, and chop them into 2cm (1 inch) pieces.

    Put the chicken, vegetables, water, stock cube and herb into a large saucepan on a medium heat. Stir thoroughly. Bring to the boil, then turn down the heat until it is just boiling (simmering).

    Put the lid on and cook for an hour. Check the liquid level from time to time and top up if it starts to dry out.

    Fish out the carcass and put it on a plate. Remove any meat which is still on the bones, Put the meat back into the soup. Discard the bones.

    If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy.

    Season with the pepper.

    ADDITIONS & ALTERNATIVES

    You an use carrots, celery, courgettes, leeks, mushrooms, tomatoes, parsnips, potatoes, swedes, turnips, etc. Using green vegetables and mushrooms will give a light and delicate broth. Using root vegetables and tomatoes will give a thick and hearty soup.

    Sage would seem to be a good herb to use. After all, sage and onion does go with chicken.

    For Chicken Noodle Soup, use green vegetables, and add a small pack of noodles.

    i have a chicken and i am hoping to make a few meals from this. Its a good sized chicked which i got for £2.00 this was on offer in the asda.

    i am hoping to make

    chicken dinner for two
    3 x chicken sandwiches pack up
    chicken curry for 3

    and i am going to try and squeeze a chicken risotto if i know how to make 1

    what do you reckon do you reckon ill be able to do this

    Hi staceydaisy,

    Yes I think you should be able to manage it if you pack your meals with vegetables, lentils etc to bulk out the chicken. Don't forget to save the carcass to make stock.

  • hi everyone. my dear other half spotted on his way home that a butcher was giving away whole bbq chickens for a pound a piece so he bought 2.:eek:
    we ate one half for sandwiches and tea. i need ideas on how to make the most out of the other one and a half and the most efficient way to stretch them. my 2 kids eat anything. theyre 1.2 kilos each i think. please help. :confused:

    chicken pie
    stir fry
    curry
    salads
    wraps...

    there's a thread on 'rubber chicken' somewhere which should help you...will try and find it!
