Sorry if this is in the wrong place, just had a thought that I should look around for a recipes thread duh!
Thought I would share my day two and day three recipes for the roast chicken we had on Sunday as they worked out really well.
Day two,
Chinese chicken and rice
Most of the chicken left on the carcass leaving a little bit for day threes soup,
Enough cooked rice for however many people you are feeding,
A few peas,
An onion,
A clove of garlic,
Two or three carrots sliced quite thinly,
Chinese five spice
Soy sauce
Fry your onion, garlic and carrot until soft, add everything else except for the rice, add a good sprinkling of five spice (about two good teaspoons) add the rice and a tablespoon or two of soy sauce and give it all a good stir round.
This was a winner last night in my house!
Day three,
Stock
Chicken stock made from the carcass plus a couple of bay leaves, 1 onion, 1 carrot and a leek or some celery, some peppercorns ( about 7 or 8)
Boil for about two hours on a very low heat then strain, cool and keep in the fridge (or freeze) until ready to use.
Chicken Soup,
1 onion
1 large carrot diced
1 large potato diced
A handful of red lentils
Spaghetti broken up ( a bunch of spaghetti about the size of a 20p coin) this isn't really necessary but I like pasta in soup)
A handful of cooked chicken chopped up quite small
Two or three pints of your stock
Salt and pepper
I basically just chucked everything in with the stock and boiled it for 10 minutes ( to cook the lentils) then simmered until it was nice and thick, but it would probably taste even better if the onion, carrot and potato were cooked very gently in some butter or olive oil before adding the stock.
The chicken was about 2.1kg from Sainsburys (Value chicken) and cost about £40 -
Just popped on to get some inpiration for my soup.
Got my 2kilo chicken before Christmas for £2.50 cos of it's date. Well roasted that on Sunday. Have had 3 lots of s/ws for 2 ppl. Still have lots of meat left! Not really attacked to get all of it off yet either. The legs and wings are still intact. Making stock today to make a soupy/stewy dish. See how it turns out really. Then I think enough for Friday (Thurs is MIL night), and Saturday.
How longs on average does a cooked chicken last. Would hate to not freeze it then waste it cos it smells funny!

Maybe you should try "rubber ham shank" instead.
I got one of these for £1.30 in market- made soup, then sliced meat and had for lunch (swore it was gammon)- leftovers made a couple of sandwiches and today I made a flan with the last little bit.

I make a lovely chicken pie with leftover chicken.
Just make a roux (butter and flour) then mix with gravy to thicken slightly. Stir in leftover chicken.
Make pastry in food processor. Then you can either make a traditional pie with a pastry top and bottom, or do what I do and make a pasty by cutting a big circle of pastry, plonking the chicken/gravy mixture on one side, folding over the other side, sealing the edges then brushing with beaten egg before baking. Make sure you do all this on the baking tray, because you'll never be able to move it afterwards!
You can also make a cheesy chicken pie by mixing the chicken with a cheese sauce (my daughter prefers this because she's gone off gravy).0 -

was thinking about a pie, maybe to go in the freezer. I'm liking the cheesy idea, mmm! Wasn't sure if it was just me cos i'm a cheese lover!
