I have already thought through making soup with the remains got loads of reduced veg aswell. I have loads of potatoes and carrots but am struggling to think of what to do with the rest of it. Hi timbo,
There's an earlier thread that should give you lots of ideas so I've added your post to it to keep the suggestions together.

Our local co-op had Elmwood fresh chickens on offer at half price on Thursday so I bought three. Froze one whole and OH cut up other two, breasts, legs and thighs and I made stock with leftovers. The four large breasts alone would have cost at least a fiver. I must admit that before coming on these boards I would never have bothered to do this.0

When cooking a whole chicken don't forget to remove and eat the best bit of the chicken - the oysters (the two little bits of meat underneath the bird, one on either side). These are juicy and delicious and many people who throw away the carcass rather than using it for stock, throw away the best bit of the bird!! Even if you use the carcass for stock, remove and eat the oysters first as they are too good to go in the stock."The happiest of people don't necessarily have the

of everything that comes along their way."
